Big Love

Love

That’s what I feel for this oversized cookie.

Dough

It’s the kind of love that involves brown sugar and it has everything to do with these little morsels.

I don’t even need the cookie. I could just munch on you guys for eternity.

ganache

Unless of course we’re talking about adding a little chocolate. Then, you could twist my arm and make me eat the cookie, too. You’ll have to twist hard.

Chocolate

Like I said… just a little chocolate. Spread the love.

The cookie heart pan is from Wilton. I found it the other day and snatched it right up. I’ve seen them online, at my local cake supply store and also at the grocery store. Grab one while you can.

Now, if you’ll excuse me… I don’t want you to watch the rest. It won’t be pretty.

Big Love

Big Love Butterscotch Cookie

Cookie
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened to room temperature
1/2 cup sugar
1/3 cup packed brown sugar
1 egg
1 teaspoon vanilla
1/2 cup butterscotch morsels

Ganache
3/4 cup heavy cream
1/4 cup butter
3/4 cup semi-sweet chocolate morsels

heart-shaped cookie pan (about 11 inches wide)
M&M’s

  • Preheat oven to 350 degrees.
  • Cover heart-shaped cookie pan with non-stick cooking spray.
  • For the cookies, whisk flour, baking soda and salt together in a medium bowl and set aside.
  • Cream the butter and the sugars using a mixer until fluffy.
  • Add egg and vanilla and mix until combined.
  • Add the flour and mix until combined.
  • Stir in the butterscotch morsels.
  • Transfer cookie dough to the pan and spread out evely until the bottom of the pan is covered.
  • Bake for about 8-10 minutes.
  • Remove and cool.
  • While the cookie is baking, you can make the ganache.
  • Heat cream and butter in a saucepan until melted and remove before it starts to boil.
  • Place chocolate morsels in a small bowl and pour cream on top. Let sit for a few seconds and stir until completely incorporated and smooth.
  • Let cool and spread on top of cookie with an offset spatula.
  • To decorate like the photo, you’ll need 85 M&M’s (red or pink or whatever) for the letters. Place candies on the ganache, using the photo as a guide. Use extra M&M’s for the border.

P.S. the heart-shaped cookie pan is also conveniently made to fit one package of refrigerated cookie dough if you so desire. And, if you can’t find a cookie heart pan, just use a regular pan and spread the cookie dough out. Depending on the size of the pan, you may need to adjust your baking times.

Just gave the heart to my co-workers and they are a happy bunch! I made a larger heart cookie on a cookie sheet and then cut it to fit a heart shaped dish. The ganache was a labor of love needing a lot of mixing, but came out smooth and very pretty. Thanks for the recipe!

Just pulled it out of the oven smells delicious… i used mini chocolate chips instead. here’s an FYI, there’s a step missing between adding egg & vanilla & then the chips you need to add your flour mixture before the chips. My family’s gonna be thanking bakerella for giving me this recipe!!!! So thank you in advance! :)

mmmm… we have some leftover butterscotch chips (from making those squares with the butterscotch chips & coloured marshmallows like my Grammie used to make) that are begging to be baked into yummy*ness – this is SUCH a good reason to hear them out! : P

I loved this one! I needed to make a dessert for our fundraiser and this was the one I wanted to make! Thanks for all the helpfull tips. I Had a hard time finding a heart shaped cookie pan like this one. I used a small shallow pie pan and my recipe for white chocolate chip cookies. The ganache was :”ga-rate! Then covered it with the valentine m&m’s…Yummy.

Thank you so much for the inspiration! The photos were beautiful, and I didn’t have to look far to find the pan (found it at Walmart). The cookie was heavenly, but I have two questions:

1. We followed the ganache instructions to the letter, but found it runny. It finally set up in the fridge overnight. Did we do something wrong?

2. We added the m&ms this morning, but by the time we ate it after lunch, the color on the candies were fading. Did you have that same issue?

Again, thanks for the wonderful inspiration. Our whole family thought it was an awesome Valentine’s treat.

I bumped into your website, just a few days ago. 2 days ago i made it. But because i live in Belgium, i couldnt find the butterscotch morsels, so i made it with chocolate morsels. :) It was really nice too!
I had to do some calculating… we dont work with “cups”, we work with grams and ml. (I’m just a bake-beginner) But it worked out just fine!

I don’t know what it is about this recipe but it is THE best cookie recipe I’ve ever found. I figured I’d better come here and tell you after having ‘borrowed’ it at least half a dozen times so far!

I don’t bake it in a big pan, I just roll the dough in greaseproof paper and chill it until its sliceable. I then bake the slices like normal cookies and they come out really soft and chewy, and don’t spread too much. The slices also freeze really well, and bake straight from the freezer in 10 minutes. Perfect for a late night snack when my little boy has eaten every cookie in the house! So far I’ve substituted chocolate chips, white chocolate and glace cherries and rum and raisin instead of the butterscotch. I want to try baileys next! Everytime they’ve come out perfectly. So thank you bakerella! :)
