Cake… Three Ways!

Mini Cakes

I love cake! And, by now you guys should know I love things little, too. So, I made some mini cakes using my new favorite moist yellow cake recipe. Actually I made 9″ cakes and used a round cutter to make them mini. Two layers will get you six 3 7/16″ cake circles and two smaller circles. Here’s how one of the layers looks all cut up.

And here they are stacked. They’re so cute… even without any frosting. (Don’t worry the scraps made it safely to my tummy.)

Little Cake

But, who would serve a naked cake. So here it is fully clothed in luscious white buttercream frosting. Hold me back!

Three Mini Cakes

I started out making the fondant covered cake that’s on the pedestal (inspired by a pillow fabric from an old Pottery Barn catalog. Yep… I love their stuff.) Then, I made the second one using decorator icing bags and tips. Then I got tired and just slapped some buttercream all over the last one. And, I have to admit, I think it’s my favorite. But, tell me what you think.

Sassy: semi-casual, piped with pretty icing and flirty flowers
Classy: all dressed up with fondant cutouts and a smooth finish

I’m messy because I don’t have the talent to pull anything else off. But I love all three little cakes. What a clever idea! If I had to pick one, I’d pick Classy. I love the Pottery Barn, too.

Your photos inspired me to try making fondant icing for the first (and quite possibly the LAST) time ever. I had my 12 year old make a second batch, and filmed it for my blog. ;) It’s got my PC tied up in knots, and me in giggles.

The cake turned out kind of pretty for a first try – not as sophisticated as your “Classy” cake, but festive. Drop by my blog later and check it out! Give it a few hours, though – the video is taking forever to upload.

I like classy. I’ve been trying out cake decorating as something fun and new to do and I definitely love being meticulous and having everything be “perfect.” I also like sassy too since I haven’t learned how to work with fondant…that’s this Sunday! XD

I love all three but if I HAD to choose I would go with sassy. It’s a little rough around the edges but still refined hahaha well I love all the cakes and especially the cake pops! I had never heard of them but simply adore the idea. I’m making them for my best friends birthday next week :)

I think they all look fantastic and I’d be happy to eat some of each! I would actually love to the recipe of the white cake shown with the buttercream frosting. I have yet to find a scratch white cake that is fluffy and moist as this one looks.
