Cake… Three Ways!

Mini Cakes

I love cake! And, by now you guys should know I love things little, too. So, I made some mini cakes using my new favorite moist yellow cake recipe. Actually I made 9″ cakes and used a round cutter to make them mini. Two layers will get you six 3 7/16″ cake circles and two smaller circles. Here’s how one of the layers looks all cut up.

And here they are stacked. They’re so cute… even without any frosting. (Don’t worry the scraps made it safely to my tummy.)

Little Cake

But, who would serve a naked cake. So here it is fully clothed in luscious white buttercream frosting. Hold me back!

Three Mini Cakes

I started out making the fondant covered cake that’s on the pedestal (inspired by a pillow fabric from an old Pottery Barn catalog. Yep… I love their stuff.) Then, I made the second one using decorator icing bags and tips. Then I got tired and just slapped some buttercream all over the last one. And, I have to admit, I think it’s my favorite. But, tell me what you think.

Classy: all dressed up with fondant cutouts and a smooth finish

It depends on what I want. Messy is gorgeous and fabulous for every day and some occasions. But I like the sassy just because it’s beautiful. The Classy isn’t my taste, but definitely beautiful too! So can I pick a favorite? NO!

Classy! It’s so different and the colours are beautiful. I love your ideo of making mini cakes so you can try out different frosting and icing styles- will definitely be doing than in future (and using the scraps for cake pops!)
…but my absolute favourite cake style is ‘tasty’. As long as it tastes amazing, I don’t care what it looks like!

My favorite is the sassy. I love all 3 and I have taken classes to make Classy and Sassy but I usually end up with Messy. I sincerely admire you for your talents to make the Sassy and Classy. I will use your buttercream icing today for my 5 year old grandaughter’s “Kitty” cake.

The amount of frosting in between the two layers on the messy cake has me drooling. And, that is my favorite ‘look’ too—in fact, it’s how I asked my wedding cake to be decorated. I just put some fresh flowers on top and it was done.

(your other cakes are gorgeous as well, and if you had cut into them, perhaps I could’ve been swayed)

I love them all for different reasons. But as a busy mom of 3 kids all under 7, I would have to say I see myself making the messy one and everyone would be just as happy as if I spent the extra time doing the others. Plus think of all the dishes I would save washing!
