Cake… Three Ways!

Mini Cakes

I love cake! And, by now you guys should know I love things little, too. So, I made some mini cakes using my new favorite moist yellow cake recipe. Actually I made 9″ cakes and used a round cutter to make them mini. Two layers will get you six 3 7/16″ cake circles and two smaller circles. Here’s how one of the layers looks all cut up.

And here they are stacked. They’re so cute… even without any frosting. (Don’t worry the scraps made it safely to my tummy.)

But, who would serve a naked cake. So here it is fully clothed in luscious white buttercream frosting. Hold me back!

Three Mini Cakes

I started out making the fondant covered cake that’s on the pedestal (inspired by a pillow fabric from an old Pottery Barn catalog. Yep… I love their stuff.) Then, I made the second one using decorator icing bags and tips. Then I got tired and just slapped some buttercream all over the last one. And, I have to admit, I think it’s my favorite. But, tell me what you think.

  7. Choose just one?! They are all great! I love the look of the classy one, but my personality matches up better with the messy one, which by the way is a very cute mess! Mine would never come out looking so nice ;) But I also love the sassy! choices…I suppose if I had to choose just one, it’d be messy but with sassy a close second!

    I’m having a bit of trouble deciding between all three of them. I like messy because it reminds me of carnations. And the colour combination for sassy is absolutely perfect! But I love the design for classy, its reminds me of designs on Indian silk.

  78. I would have to say that I am a MESSY cake!!! I am very simple and plain and not very good at all the pretty piping (though I would love to be able to do it) and I am HORRIBLE with Fondant (another thing I would love to be better at!)

    I usually make messy cakes because they are fast, easy, and don't require any real thought. But sassy cakes are pretty and more impressive. Classy cakes are pretty to look at but a bit too formal for my taste.

    I love, love, LOVE the idea of cutting smaller cakes from a larger one. I may have to do that with the red velvet I'm thinking about making for my office holiday party next week.

  87. For the most part, I usually prefer my cakes “sassy” – all decorated up pretty with piped flowers and lines and all sorts of pretties. But for these particular little cakes, I think that the “messy” fits most perfectly! Little cakes deserve to be messy and gooey and good!

  168. When I really started to think about it, I realized my “style” depended on the occasion and kind of cake. Coconut cake should always be messy, important occasions should be classy, etc.
