Easy and Easier Valentine Treats

If the Valentine’s Day Cake I made last week seemed like a little too much, then I think you’ll enjoy these. They require very little ingredients or effort and they’re still pretty cute.

Red Velvet Sandwich Cookies

They are sweet and red and a perfect little treat to give on the 14th. And even better, they are super-easy!

Red Velvet Sandwich Cookies
Yield: 12 sandwich cookies

Red Velvet Sandwich Cookies

Prep Time 20 minutes
Cook Time 12 minutes
Total Time 32 minutes

Ingredients

Cookies

  • 1 Box red velvet cake mix*
  • 1/2 cup butter, softened to room temperature
  • 2 Eggs

Cream Cheese Filling

  • 1/2 cup butter, softened to room temperature
  • 8 oz. Package cream cheese, softened to room temperature
  • 1 lb. Box of confectioners' sugar
  • 1 tsp vanilla

Instructions

  1. Cookies: Preheat oven to 350 degrees.
  2. Mix ingredients until combined.
  3. Drop spoonfuls of cookie batter onto baking sheet about two inches apart.
  4. Bake for 10-12 minutes. Cool.
  5. Filling: In a mixer, cream butter, cream cheese and vanilla.
  6. Gradually add sugar and mix until smooth.
  7. Spread filling between two cookies and press gently together.

Notes

* Any cake mix should work.

Red Velvet Cookies

Tip: For consistent size cookies, use a 1.5 inch small ice cream scooper when placing batter on the baking sheet.

The finished cookie size will be about 3 inches wide.

Red Velvet Cookies

To assemble, spoon a small amount of frosting on the flat side of one cookie. Take another cookie and press together until frosting is flush with the edge.

Now, some people would call using a cake mix cheating.

This is cheating. Or maybe it’s just being resourceful. Either way… still cute.

I mean, one of my favorite cookies made into a cake has to be good.
And since I was in a valentine kinda mood, I decided to eat my heart out.

And the best part is eating the scraps along the way. Yum!

The cakesters are about 1.75″ wide. So you will need a cutter smaller than that.

  6. I made the Red Velvet Cookies with Cream Cheese Frosting – since we don’t have any Red Velvet cake mix on our small island in Alaska, I used white cake mix and dark chocolate cake mix. They turned out great! I added a bit of color by putting red sprinkles into the frosting. They were the hit of our Young Life Bake Sale! Thanks for the great idea!

  28. I made these for V-Day 2010. My boyfriend is a huge red velvet fan. In fact I had never even heard of red velvet cake until I met him 6 years ago. I did a marshmellow filling instead (butter, powdered sugar, marshmellow creme: thanks martha!), and let me tell you they tasted fantastic! Especially when they were chilled!

We made them in the spring for my daughters b-day (for her to take to school) and I am making some right now as I type this for our halloween party. These are really good for taking to school by the way! The kids love them and they are less messy than cupcakes. (although I do LOVE my cupcakes!;) I’m using a white cake mix that I added red and yellow food coloring to. I also bought some white frosting and colored that green for the filling.   51. In my (hometown) neck of the woods, these types of cookies or cakes are called Whoopie Pies. They were originally a dark chocolate with the white filling. Now they have branched out to all different flavors. Orange with white filling, chocolate with mint filling, choc. with peanut butter filling, vanilla with strawberry filling and so on. I made them only once. Turned out pretty well.

    should note that the batter/dough was quite thick for my little hand beater! i also thought there was too much icing made… probably could have cut that portion by 1/3 to 1/2

  86. hi there. i LOVE your valentines day ideas. esp. the ez ones. can you believe that there is NO RED VELVET cake mix available in the store here. i know, its a travesty. however, i have put up an emergency signal to my southern based mother who is sending a scratch recipe for the red velvet. (it does not work to try to make vanilla cake with red. 1. you need more than a whole giant bottle. 2. it never gets dark red – that is caused by cocoa. just thought you might like to know!

  92. I made the red velvet cookies today and they are great! I took half the cookies and cut out a heart shape while the cookie was still warm from the oven. When I pressed the two halves together the cream cheese frosting puffed up in the middle and filled in the heart cut out. Way cute!
