Easy and Easier Valentine Treats

If the Valentine’s Day Cake I made last week seemed like a little too much, then I think you’ll enjoy these. They require very little ingredients or effort and they’re still pretty cute.

Red Velvet Sandwich Cookies

They are sweet and red and a perfect little treat to give on the 14th. And even better, they are super-easy!

All you need is

1 Box red velvet cake mix*
1/2 Cup butter, softened to room temperature
2 Eggs

  • Preheat oven to 350 degrees.
  • Mix ingredients until combined.
  • Drop spoonfuls of cookie batter onto baking sheet about two inches apart.
  • Bake for 10-12 minutes.
  • Cool.

Cream Cheese Filling
1/2 Cup butter, softened to room temperature
1 8 oz. Package cream cheese, softened to room temperature
1 1lb. Box of confectioner’s sugar
1 tsp Vanilla

  • In a mixer, cream butter, cream cheese and vanilla.
  • Gradually add sugar and mix until smooth.

Makes about 24 cookies or 12 cookie sandwiches

* Any cake mix should work.

Tip: For consistent size cookies, use a 1.5 inch small ice cream scooper when placing batter on the baking sheet.

The finished cookie size will be about 3 inches wide.

To assemble, spoon a small amount of frosting on the flat side of one cookie. Take another cookie and press together until frosting is flush with the edge.

Now, some people would call using a cake mix cheating.


This is cheating. Or maybe it’s just being resourceful. Either way… still cute.

You guessed it. Oreo Cakesters, baby. I have been wanting to try these for a while now.
I mean, one of my favorite cookies made into a cake has to be good.
And since I was in a valentine kinda mood, I decided to eat my heart out.

And the best part is eating the scraps along the way. Yum!

The cakesters are about 1.75″ wide. So you will need a cutter smaller than that.

Now, since Valentine’s Day is almost here, here’s another quick giveaway.

I baked the cookies and froze them ahead of time. I even iced them while they were still frozen. It worked great. Everyone loved them.

I would like to have $100. $50 to give my son. He is 26 and disabled and left me the sweetest valentine I’ve ever received. It said. Mom, Happy Valentines. You were my first valentine. I love you soooo much. He would be able to buy something for himself.

The other $50 would be for my daughter. She is amazing. She is currently in school full time (studying to be a PA) and works 26 hrs a week in a hospice center. Recently marrying they don’t have any extra money. So this would allow them to go out for a Valentine dinner.

There’s something very appropriate about splurging on V-day. I’d love salad greens with roasted golden beats and goat cheese, ribeye w/smashed potatoes, and Chocolate creme brulé for dessert. Or, just take me to Bistro Roca in Blowing Rock, NC.
