Heathy Cookies
Want some heathy cookies?
Nope, that’s not a typo.
Healthy would be nice, but ……
These are all Heath.
I bought this bag of milk chocolaty toffee bits the other day.
Then I made the mistake and opened the bag to nibble on them.
You know, just for a taste.
Then I didn’t stop nibbling on them.
Every time I did something in the kitchen, I would pinch a few bits.
So I made myself bake something with them tonight before all my bits were bitten.
Toffee bits and a few basics are all you need for these cookies.
Fluffiness.
Dark brown sugar.
Yumminess.
Butter and peanut butter. Yes and yes.
Creamed.
Eggs and vanilla.
Or eyebrows… depending on which way I flip the photo. : )
After mixed, throw in the bits.
Roll and dip them in more toffee bits.
Then bite.
Easy!
And if you want to make them a little sweeter. Maybe for your sweetie.
Just bake them in a heart shaped silicone pan.
It just adds a little bit of love.
Heathy Cookies
2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, slightly softened
1 cup dark brown sugar
1/2 cup peanut butter
2 eggs
2 teaspoons vanilla
1 1/3 cup (8 oz bag) Heath Toffee Bits
- Preheat oven to 350 degrees.
- In a small bowl, mix flour, soda and salt using a wire whisk and set aside.
- In another bowl, cream butter, dark brown sugar and peanut butter until light and fluffy.
- Add eggs and vanilla and mix until combined.
- Add flour mixture to creamed mixture and mix until combined.
- Stir in toffee bits, reserving some to dip tops of cookies.
- Roll cookie dough into 1-1/4 inch balls. Chill for a few minutes to make it easier to roll or use a small cookie scoop.
- Dip tops of cookies in bits and place on parchment paper covered baking sheet.
- Bake about 10 minutes.
- Place cookies on cookie rack to cool.
- Makes about 30 2-inch cookies.
- Note: I only had almost a cup left of bits to use for these cookies, but I would use the whole bag and possibly even two for these cookies.

LOL – I read it three times before I realized it didn’t say ‘healthy’ and the whole time I’m reading it I’m shaking my head thinking what is healthy about this?
They do look delicious will have to make some with the kids. Is there something I can substitute the toffee with it isn’t available in Australia.

Hi! Love your blogs…I am always inspired. I do have the heart silicone pan. Do you have any tips for using this pan. I haven’t had any luck with the silicone pans..I spray it to before baking too…any secrets ?

Does the use of White Lily affect the texture to the point that using another flour would be ill-advised? It’s more finely ground and lower gluten than the other all-purpose flours on the market.

Tuesday, Jan. 24 is National Peanut Butter Day! Yay!
With that said, I’m allergic to peanuts…boo. Is there a variation for this recipe not using peanut butter? Could just use the recipe for chocolate chip cookies, I suppose. Ideas?

You got me…totally thought this said healthy cookies! You’ve combined 2 of my favourites…pb and toffee bits…in fact, this is a combo I often get when having ice cream at the Marble Slab (plus some cookie dough of course)…and I agree with you – toffee bits = trouble (that’s why I keep mine way up high in a cupboard I can’t reach).

Yep, you had me fooled. I thought I was going to be looking at a healthy cookie recipe and honestly wasn’t too excited. But these – well I think my hubby will love ’em and I can use the excuse of “I’m trying to empty my pantry for the move” as to why I HAD to make them. (now to buy the bits!)

I used light brown sugar because that’s what I had, and it turned out fine, but I’m sure I’d prefer the color and texture of the dark brown!

Sounds great! When you bake in a silicone pan, what temp/time adjustment do you make from baking on a parchment lined cookie sheet? I have a couple of silicone pans, but never use them because I don’t know how much to adjust the t ime and temp.

I have never met a toffee-based dessert item that … in the words of Pioneer Woman Ree … didn’t “make my skirt fly up!” So I am going to be working on some Heathy cookies soon. Thanks, Angi! (Although this may mean I bake cookies instead of cake pops next.) Decisions, decisions.

I love those Heath bits! I make bacon toffee cookies with those, and people go nuts for them!
I can’t wait to try these!!!!! My all time favorite is Heath. I do the same thing every time I buy a bag of the Heath bits, I keep munching on them, thank you for the recipe now I have something else to do with them. :)
