Heathy Cookies

Want some heathy cookies?

Nope, that’s not a typo.

Healthy would be nice, but ……

These are all Heath.

I bought this bag of milk chocolaty toffee bits the other day.

Then I made the mistake and opened the bag to nibble on them.

You know, just for a taste.

Then I didn’t stop nibbling on them.

Every time I did something in the kitchen, I would pinch a few bits.

So I made myself bake something with them tonight before all my bits were bitten.

Toffee bits and a few basics are all you need for these cookies.

Fluffiness.

Dark brown sugar.

Yumminess.

Butter and peanut butter. Yes and yes.

Creamed.

Eggs and vanilla.

Or eyebrows… depending on which way I flip the photo. : )

After mixed, throw in the bits.

Roll and dip them in more toffee bits.

Then bite.

Easy!

And if you want to make them a little sweeter. Maybe for your sweetie.

Just bake them in a heart shaped silicone pan.

It just adds a little bit of love.

Heathy Cookies

2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, slightly softened
1 cup dark brown sugar
1/2 cup peanut butter
2 eggs
2 teaspoons vanilla
1 1/3 cup (8 oz bag) Heath Toffee Bits

  • Preheat oven to 350 degrees.
  • In a small bowl, mix flour, soda and salt using a wire whisk and set aside.
  • In another bowl, cream butter, dark brown sugar and peanut butter until light and fluffy.
  • Add eggs and vanilla and mix until combined.
  • Add flour mixture to creamed mixture and mix until combined.
  • Stir in toffee bits, reserving some to dip tops of cookies.
  • Roll cookie dough into 1-1/4 inch balls. Chill for a few minutes to make it easier to roll or use a small cookie scoop.
  • Dip tops of cookies in bits and place on parchment paper covered baking sheet.
  • Bake about 10 minutes.
  • Place cookies on cookie rack to cool.
  • Makes about 30 2-inch cookies.
  • Note: I only had almost a cup left of bits to use for these cookies, but I would use the whole bag and possibly even two for these cookies.

This is so ironic! I make my hubs heath cookie A LOT! he absolutely loves them and then we were talking and he goes “you should make some health cookies for me but the cookies need to be peanut butter cookies!” Needless to say I just got done baking a batch before I came on and saw this. Love your ideas!

I tried out this recipe and everyone loves the cookies naturally. I had two problems I had to solve. First, my local grocery store only had the HEATH toffee bits with no milk chocolate pieces in them. So, I bought a bag of mini HEATH bars and smashed them into bits with a hammer. Second problem is that my cookie doesn’t flatten out from a ball in my oven. I had to flatten the dough balls with the bottom of a glass so that mine would come out as flat as yours. 10 minutes was perfect for my oven too! Normally, I have to subtract one minute from cookie recipes to accommodate my odd oven. Any suggestions on why my cookie dough balls never flatten out into nice flat disks? If I leave them in the oven too long then the bottoms burn. Nobody likes a burnt bottom! ;)

I made these cookies and they turned out so fantastic! The peanutbutter really adds to the tastes, but doesn’t overwhelm them. In no way are these like true peanutbetter cookies. Bakerella isn’t kidding when she says she would use 2 bags of Heath next time. So will I! I will use a bag and a half in the batter, leaving at least half a bag for coating the tops of the cookies. Trust me, the ones with extra candy on top tasted so much better than those left without when I ran out of candy. Also, for me the best batch of cookies were the ones left in for only 10 minutes like Bakerella said to. At first, I thought they weren’t done enough, and left them in for 12 minutes. My last batches were for only 10, and turned out the most tender, especally the next day. My husband, little brother and I couldn’t get enough of these. :D

My granddaughter and I made these yesterday. I only had chunky peanut butter and light brown sugar but they were absolutely yummy. I also used the Heath chips w/o chocolate because that’s what I had on had. Had no problem with them flattening out and I baked at 10-11 minutes. We got more than 30 cookies so I guess we didn’t roll them into big enough balls but they were the perfect size. My granddaughter also called them “Healthy” cookies when she was looking at the recipe. After pointing out they were “Heathy” she wanted to make them despite my lack of specified ingredients. I’m sure they would have been even more “yummier” if we had used the called for ingredients. Will bake these again. Thanks Bakerella!!

I have used your cake pop recipe before, and it turned out great!! I really want to make lego “ninjago” cake pops, so do you have any ideas on what I can do to cover their faces? I don’t know if fondant will hold….

I haven’t read through all of the comments but SunButter is a great alternative to peanut butter. Just use half the amount of Sun Butter as you would peanut butter because it has a stronger flavor when cooking.
