S’mores Brownies

S'mores Brownies

Ooey Gooey Goodness!

Chocolate, graham crackers and marshmallows all baked up in a fudgy, gooey brownie. What could be better?

S'more

It’s like having a campfire inside my oven.

Chocolate

I love a recipe that starts with chopped chocolate.

S'mores Brownies

And ends in something like this.

The recipe for these is from one of my favorite cookbooks, Home Baked Comfort. At least favorite to look at anyway, because I’ve only made one other thing from it so far. But it’s one of the few books I have that I’d want to make almost everything in. Here’s the other recipe I tried out and love: Chewy Chocolate Meringues if you want to check them out. They are way good!

chocolate

Melted chocolate is so pretty to me. So smooth, shiny, warm, and the beautiful beginning of these brownies.

Heat the chocolate with butter, whisk in sugars, add eggs, vanilla and salt.

Sifted

And then sift in the flour and cocoa. Hello.

So, after I added the sugars, I realized I was going to need a bigger pot. But too late for that … no turning back.

graham crackers

So I carefully stirred it all together and added the crushed graham crackers to the mix before spreading in a pan.

Yummorama!

Marshmallows

Then just top with marshmallows. I used 9 jumbo ones, but next time I think I’ll try regular size. Read the notes in the recipe below if you decide to make these. The giant amount of gooeyness from these seeped in and made the brownies take longer to bake.

But if you like gooey melt in your mouth brownies, you’ll love these.

S'more Brownies

Bake away.

S'mores Brownies
Yield: Two Dozen Brownies

S'mores Brownies

Prep Time 20 minutes
Cook Time 30 minutes
Total Time 50 minutes

Ingredients

  • 1 cup unsalted butter
  • 10 oz. bittersweet chocolate, chopped
  • 1 cup sugar
  • 3/4 cup packed light brown sugar
  • 4 eggs
  • 2 tsp pure vanilla extract
  • 1 tsp kosher salt
  • 1-1/3 cups cake flour
  • 3 Tbsp natural cocoa powder
  • 6-8 whole graham crackers, crushed in your hand
  • 9 jumbo or 12 regular size marshmallows

Instructions

  1. Preheat oven to 350 degrees and generously grease a 9-by-13 inch baking dish
  2. In a large saucepan, melt butter and chocolate over low heat, stirring often until melted and smooth. Remove from heat and whisk in sugars. Then whisk in eggs one at a time, beating well after each addition. Whisk in the vanilla and salt.
  3. Sift the flour and cocoa over the chocolate mixture. Use a rubber spatular to stir just until blended. Stir in crushed graham crackers. Pour into dish, spreading evenly and top with marshmallows.
  4. Bake until a toothpick inserted comes out almost clean, 30-35 minutes. Cool and cut into gooey squares.

Notes

Try regular size marshmallows. The jumbo ones I used almost covered the entire surface of the brownie when baked and as they melted into the batter, caused me to increase the baking time significantly until done. About 30 minutes in, I covered the dish with foil to keep the marshmallowy tops from getting much darker. Smaller marshmallows would have yielded less goo and given the brownies more places to show through the surface. The few spots that weren't completely covered by marshmallow had a wonderful texture, but the marshmallow saturated sections were gooey even after increasing baking time to almost 45 minutes. But you may like that too. Either way - super yummy!

  1. What kind of flour have I to use -self-raising or plain?

  2. I’ve lost track of how many times I’ve made these over the last three years. I made them again for a work meeting yesterday and they were such a hit that I am making them again today for BBQ. Thanks for sharing such a an amazingly yummy recipe!

  3. Will it work if I just use all-purpose flour? How would it affect the brownies?

  4. The brownie has a cakey texture, and is more like a moist cake in bar form than a brownie.

  5. Luv em

  6. I made these and they are spectacular, Thank you for the recipe

  7. Wow those look awesome

  8. I’ve made these a couple times now, and for some reason, my marshmallows don’t seem to melt like yours. I think I’ll use the mini marshmallows the next time. They are super delicious none he less! Thanks for posting this recipe.

  9. what if i wanted to make it into a two layer cake?

  10. ?????Great shape?????

  11. ???????????

  12. I love your recipes. Thank you very much! I admire the way you can from such simple ingredients to prepare such a beauty!

  13. I made them with mini marshmallows and 45 min the middle was still soupy and not cooked. I think next time I will bake the brownies then add the marshmallows to the top for just the last few minutes so they brown….

  14. I was intrigued by the recipe and decided to make it for the pre-k children that I teach as a special treat for the last day of school. They look delicious ,but I found the cup of butter too be too much. I followed the recipe exactly ,but my brownies came out greasy. I think 1 cup of butter is too much. Also I would recommend using mini marshmallows instead of jumbo ones.

  15. These look soooo yummy. Food is my favorite thing! Don’t think I won’t make these! Marshmallows are actually the best. Can’t wait to try these out. My friends and I love to bake so this is a definite must for us.

  16. Made these – AMAZING! I actually liked that it was slightly undercooked and fudgy/gooey under the brownies. I served it warm with vanilla ice cream and everyone loved it!

  17. I didn’t read through all the comments so not sure if someone already said this, but I happened to have the Jumbo Marshmallows so just cut them in half and they seemed to be the size of a regular large marshmallow. I also only had unsweetened choc so will see how they turned out. :-)

  18. Hhhhmmmm – that’s my diet out of the window for another day then!

  19. We made these last weekend, and they were ah-mazing!

I ended up taking the leftovers (so I wouldn’t clean the pan out myself) to a party five days after they were baked, and even that old, they tasted great! Everyone was in love with them.

    This is a keeper!

  20. I mean it TASTES really good =)

  21. I tried it out today….The marshmallows didn’t want to melt =(

But never the less it taste really good

  22. All I can say is OMG. Everything looks SO inviting but I’m sure they wouldn’t work with my diet either.

  23. I saw them last week translated everything and tried them last week…They are soooooo delicious I was not able to share!
    Greetings
    Nova

  24. I’ve officially made these three times already. Per a request, the most recent time with a layer of mini marshmallows inside. I end up using a whole bag of regular marshmallows on top and it is perfectly decadent.

Any thoughts on baking time when making them in cupcake form?

  25. I’m so excited to try this recipe! As a gift to my *very difficult to buy for* Grandpa for Christmas I “gifted” him a homemade sweet treat delivered straight to his door every month. This month he has requested brownies and I’m just dying to make these for him. I shared a link to your recipe on my blog today as part of what I’m loving this week. I would love for you to come by and check it out sometime. Thanks for always being such an amazing inspiration!

  26. I made these last night with regular size brownies and while the topping was a little fluffy at first, overnight the marshmallows sank into the brownies. I might toss a few more (maybe 15 total) on next time. I also didn’t have enough bittersweet chocolate so I used half semisweet, and that worked out just fine. I think they might be even tastier with some chocolate chips thrown in! Thanks for the great recipe!

  27. Can i use regular flour instead of cake flour?

  28. my marshmellows didnt melt.. just got all brown.. werent they supposed to melt in? otherwise… best brownie ever..:)

  29. I’ll be making it soon. On Valentine’s day my boyfriend gave me an unusual Valentine’s present – he made a private booking for one of the courses organized by Zac’s cooking school in our native Vancouver – cooking classes for couples so I’m now collecting interesting recipes to come up with during that course. And I’m sure this recipe will most certainly be among the first ones we’ll try together.

  30. Ummm… amazing! We gained weight just looking at these. Worth it. Thanks for sharing!! We can’t wait to try!

  31. Oh my gosh! I need this in my life. Pronto :)

  32. This looks yummy !
    I will try them.

  33. Oooo, these look good. And I’m not even a fan of S’mores so that’s saying something. But I’m loving the ooey gooeyness of these!

  34. These are really amazing! I made them yesterday and they tasted great!

  35. These look really tempting and all that gooeyness would go down a treat with friends.
Love your photos they really sell the product

  36. Man, why did I start my diet last week, before I had made these? They look amazing! I shall invite a large family over for dinner, and make these for dessert. Then I can have some, but will be saved from the whole pan. Otherwise I will eat them all.

  37. What would be a UK equivalent to Graham Crackers?

  38. Smores combine all of my favorite flavors. Fantastic I can now eat it in brownie form with your recipe! Beautiful photos!

  39. These look divine. Its like a taste of summer with out the campfire:)

  40. Whenever I have baked with marshmallows, the marshmallows have disappeared. Any tips?

  41. Oh I would love to try some of these :0)

    Thanks for sharing your receipt.

  42. Looks like a class project to me. YUM!

  43. I want. WANT. I need. NEED.

  44. These look so amazing! I wish I could eat one right now!!

  45. bakerella- could u make more things like the cupcake burger and fries? plz!

  46. these look heavenly! now I’m craving them xD

  47. Guess what’s in my oven now :D
We dont know s’mores like you have them(netherlands) but thanks to cartoons my daughter now eat peanut butter and jellie(ok jam) sandwiches and has been asking for s’mores for sometime now
hope this is an acceptable alternative for her :D

i’ll keep the muffin tip in mind for next time,
maybe in mini-cupcakes with a mini marshmellows or would the cracker-crumbles be to big?

  48. You had me at ooey gooey!

  49. Oh my word, girl … these look fabulous. Totally teen-worthy! They’d disappear in no time, for sure.

  50. Looks so so godd.

  51. I have to make these! they look amazing!

    http://shinebrightx18.blogspot.co.uk/ – personal blogs.

  52. Beth – did you use the whole bag? That sounds like it would be too much. In the notes above in the recipe: I had to increase the baking time a lot from the recipe in the cookbook, I think I had too much marshmallow. (9 jumbo marshmallows) The recipe called for 12 jumbo but by looking at the photo in the book I think they meant to say 12 regular size (as opposed to mini). But I just baked the brownies longer with foil on top to keep it from browning too much and then let them set for awhile before eating. They were fine and super yummy.

  53. Can almost taste and feel that ooey-gooey-goodness!!! These look amazing!

  54. OMG!!! Yummmmmmy!!!! Must make them tonight!!!!

  55. They look good… I have made someting similar before but used mini marshmellos and chocolate chips and then when they were cooling drizzled caramel over them. Yum.

  56. This recipe looks amazing! I don’t know if you caught this week’s Shark Tank, but the creator of the “smuffin” walked away with no investment from the sharks. She charges $50 for the shippment of 12 s’more muffins, which is more than unreasonable. Your recipe puts her muffins to shame! Thanks a mil for sharing.

  57. I used a bag of mini marshmellows and I think it’s too much? They didn’t bake correctly :(

  58. oooh looks yummy!!! sinfully delectable!

  59. These look soooo good!

  60. Now I need to makeup an excuse to make these… They look awesome!

  61. These look heavenly!! Love this idea!

  62. Omg that looks soo good! I want to try making these too! I live in the Netherlands and we use grams instead of cups, so one cup is how many grams?

  63. Mmmmm bbbrrooowwnnniiieesss :P nomnomnom

  64. I’m so hungry right now :3

  65. After buying the Home Baked Comfort these immediately stuck with me and made them a while back. Now, after seeing yours I want some more!

  66. Sorry, dygcuk means that my elbow just banged into the keyboard:-)

  67. Yummy! I just ate my computer screen :-) These are perfect for a summer barbecue or a party. Boy am I dygcuk hungry.:-)

  68. *le sigh*

Can you just pack those up in your car and head over here?!?

  69. These look delicious!! I have trouble getting brownie batter into the pan before it all goes in my belly, maybe this recipe will help! haha.

  70. These look so yummy. I’ve never had a S’more before, I think I’m going to try these very soon.

  71. They look so amazing!

  72. OMG! I remember S’Mores from my year in the US as an exchange student. But S’Mores as Brownies? Fabulous! Already added to my To-Bake-Soon-List.

  81. Those look UNBELIEVABLE.

  82. Dang it girl!! I’ll ski a few more runs 2day to fit in a few of these beauties.

  83. This is so perfect to make today with no school. Thank you so much. We want them gooey and messy.

  84. Perlin and Warren – Thanks! I updated. I guess I shouldn’t be writing directions after midnight with sleepy eyes. : )

Jayne – these are pretty sweet.

Joy – mine with the jumbo marshmallows were still kinda messy. But I’m hoping the regular size are the perfect balance. Let me know if you make them.

  85. Yum! Pinned it, can’t wait to try!
    Jolleen

  86. I am so glad you posted these. I was just looking for something exactly like this the other day! Portable smores that aren’t tooo messy :)

  87. I cannot tell a lie. I love s’more brownies. They are a major comfort food for me. Over 30+ years ago, my mom would bake similar brownies for me. Thank you for the warm, delicious memory that always made every pre-adolescent tragedy I ever had all ok again :) YUM. It’s like a big hug with gooey marshmallow!

  88. I really need to make these. Last year (or two years? gosh!) I made s’mores trifle, and it was awesome if messy. This sounds equally good.

  89. Those brownies look amazing! Yummy!! Can’t wait to make them!

  90. These look divine! It is 8:30 AM but you’ve already got me in the mood for brownies. That spells trouble :)

I developed a bakery product like this for wholesale a few years back and found that I needed to increased the liquid in the recipe to offset the addition of the crumbled graham crackers, which tend to suck the moisture out of the brownies. In this case since there’s no liquid ingredient in the recipe aside from the flavoring, one could add some coffee or espresso.

Also, I baked them in nonstick muffin tins to make individual brownies. That way the brownies baked faster so the marshmallows wouldn’t over-brown or dissolve.

I currently have 20 bags of marshmallows languishing in my basement (MMF project gone awry) and I think you’ve given me a good reason to crack one open today and use up a bag :) Thanks.

  91. I can’t get over how amazing the browned marshmallow topping looks! Yummorama is right! Pinning these for my next brownie baking session.

  92. Clearly you and my diet do not get along….

  93. What a great home made brownie recipe! I can’t wait to try it!

  94. I want these soooo bad. My friend is also a connoissuer of brownies and might freak if she saw this recipe.

  95. Very good! I love your recipes! Bye, Lu

  96. I’m going to make this soon.

I just skimmed over the photos to the recipe where I noticed it called for whole graham crackers and didn’t say to crush them, and that didn’t seem like it would work. I went back to the text by the photos and saw that it did say “crushed” there, but it would help to add them to the directions.

  97. Omg. Those look fabulous.

  98. Oh my goodness, how fantastic! I-Must-Have-A-S’more-Brownie! Mmm!!! ,’)

  99. I have Home Baked Comfort too and I love it! You absolutely MUST try the pumpkin coffee cake. It’s incredible!

  100. When I saw the title in my inbox, I knew I didn’t have to see it to love it. This is just so indulgent and gooey! My only fear is if these would be toothachingly sweet with the sugar and marshmallows?

  101. When you say “brown sugar”, do you refer to the dark one or the light one?

  102. OMG I am soooo going to make it soon. Thank you for sharing.

  103. Oh my word. Those look fantastic! And super easy… I think these are going to be my potluck dish next weekend!

  104. Awsum

  105. Oh my gosh. I haven’t baked anything in months- this is really tempting for me to go out to the shops and make these right now ;_; Sounds so delish!

  106. I think I need one of these… like right now.
