A few weeks ago, my friends over at Cake Art gave me a sample pack of some paper pans in a plethora of shapes and sizes. They thought I might like them. But, I don’t. I love them. You can bake and then turn right around and take your goodies to someone special. Either that or display them at home and turn your kitchen into a coffee shop which could be fun, too.
These tiny ones make me happy. The size. The color. The slightly scalloped edge. Happy.
And so do these tee-niny ones. Eeeeek!
They have cylinder-shaped baking molds and regular muffin cup styles, too. Both of these are sturdy enough that you don’t need a muffin tray to bake them in. Just arrange them on a baking sheet and go.
And look at these cuties. They have lids. Perfect to bake and take.
Since I had all these pans, I had to put something in them.
I went for blueberries and bananas…
… and made some yummy muffins.

Add a little butter while they’re still warm and your tummy will say thank you.
Then tear right in.
I had enough batter to try them out in all of the smaller size pans for fun. The large round paper cake and loaf pans would have to wait for another day.
But you don’t. Cake Art was sweet and gave me a second sample pack. So who wants it? Anyone?

Blueberry, hands down! Any variety. There is something about the perfection of the tart little blueberry nestled in the sweet and fluffy cake that makes it sublime.

Favorite muffin? Tough question. Banana chocolate chip, homemade. I don’t know what it is about muffin mixes, but they turn out too tasteless and fluffy. Not like a crust homemade muffin that oozes warm feelings and chocolate through your body. Yum, I have to go make some now.

Mmmm….muffin! My favorite has to be from a local organic cafe called Java Dive. They make the most devine Mocha Chip muffin! It’s so moist and large mocha chips…to die for! They also are a Gluten Free cafe so anything on the menu is available if GF form.

It’s called a “Good Morning Muffin.” I got the recipe from a co-worker, who got it off an Emeril website. The recipe is full of good, healthy things like carrots, green apples, parsnips, raisins. I adjusted the recipe to make it much, much healthier and just love it!

Not to be a suck up or anything…..but my favorite muffin us currently the chocolate chip mini pancake muffins on your site. I tried out the recipe one day and loved them! They’re quick, easy, and my 3 year old will actually eat them! She’s incredibly picky, but she requests the mini pancake muffins….so I always have some in the freezer for her!

My favorite muffin of all time is a lemon drop muffin made by a bakery (now defunct, unfortunately) in Texas. It was tangy, lemony and sweet, with a lemon glaze on top and a center of lemon curd. Delicious!!
