“Hi Bakerella, I’m following your blog for a long time now and you inspired me to make one for my own. I’m a huge fan of the American way of baking. Last week I made Cake Pops for my dads birthday party. I made Coffee Pops. Its an self creation and I made them because they matched with the Italian Tiramisu which I also made for the party. I don’t know if they are stylish enough to appear on your website. Sure I’d be nice. But the main intention of my mail is to show you how inspiring your page is for me.     Cake

    75g butter
    2 eggs
    50ml oil
    100g sugar
    50g brown sugar
    250g all purpose flour
    1TL baking powder
    pinch of salt
    1/2 teaspoon baking soda
    75ml espresso or strong coffee
    1 teaspoon vanilla extract
    2 teaspoons cognac

    Frosting:

    125g warm butter
    200g cream cheese
    300g confectioners sugar
    1 teaspoon cognac
    25ml espresso or strong coffee

    Decoration

    200g coffee cream chocolate
    200g milk chocolate or dark chocolate
    25g shortening
    about 300-400g chocolate sprinkles
    mocca beans
    lollipop sticks

    preheat the oven up to 350 °F.

    mix together the ingredients for the cake until blended. begin with eggs, sugar, oil and butter. then add flour, salt, baking powder and soda. after all add the vanilla, coffee and cognac.

    bake the cake for 30 minutes in a 10 or 11 inch circular baking pan. make sure that the cake is done in the middle before taking out.

    Let the cake cool for a bit. Than put in the food processor and create fine crumbles.

    Mix the frosting ingredients together until they have a creamy texture.

    Add the crumbles and stir together.

    Cool the mixture for 3 hours.

    And the next steps are the same as Bakerellas. Just form balls, add the sticks and dip into the chocolate.

    Finish them by adding the sprinkles and a mocca bean for each pop.
