Butterscotch… my new best friend!

Butterscotch Brownie Birthday Cake

I’ve developed a new found fondness for butterscotch. I was using some morsels as decorations for some pops (I’ll show you sometime later) when I made the mistake of tasting a few. Before I knew it, the bag was half gone. Seriously, those things are good. So good, that when I wanted to make some brownies for my sister’s birthday, I ditched my old best friend, chocolate and made her some over the top yummy butterscotch brownies. And, since it was her birthday, I decided to make them extra special. So, I made her a Butterscotch Brownie Birthday Cake.

First, I greased and floured some small 5 inch cake pans. I used this recipe for the brownies from Nestle’s website.

Then, after they were cooled, I added some yummy butterscotch ganache (recipe below). Make sure to put some wax paper or foil underneath your cooling rack so you don’t get ganache all over the place. See that little bit starting to ooze down the side.

In a minute it will look like this. Yes, my countertop was covered with ooey gooey goodness.

Now, I really didn’t want to hurt my other best friend’s feelings, so I added some chocolate ganache and sprinkled on extra chopped pecans. For the top layer, I just used the chocolate ganache and when it was almost set up, added some butterscotch morsels for decoration. I thought about spelling her name out with them, but I already used her initials on last year’s birthday cake. So these were just placed randomly on top.

Here’s the birthday girl. It looked so good, she couldn’t wait for a fork. She may be getting older, but she’s definitely still a kid at heart.

Now, you’re probably feeling bad for me because she got the butterscotch birthday cake all to herself.

Well, don’t.

I made a third layer… in a 6 inch cake pan. (Shhhhhhhh… don’t tell her.) Hey, I had to have some to try myself, you know. I topped this layer with lots of chocolate and butterscotch ganache, chopped pecans and extra butterscotch morsels… heavenly!

Here’s a peak at the inside.

Butterscotch Brownies

Butterscotch Ganache

6 oz. butterscotch morsels
6 Tbsp heavy whipping cream
3 Tbsp unsalted butter

  • In a small saucepan, heat cream and butter until just before the boiling stage.
  • Pour over the butterscotch morsels.
  • Let stand about 20 seconds and stir until smooth.
  • Pour over brownies.

For chocolate ganache, just replace butterscotch morsels for semi-sweet chocolate morsels.

  19. Wow, I loved these! I fell in love with butterscotch when I made graham butterscotch cookies, and this was a worthy second. Making the butterscotch ganache and an accompanying chocolate sauce is worth the extra work (versus cutting up a brownie by itself, naturally …!)

  20. just tried this recipe for a birthday cake and it was amazing! i did a 9 inch pan instead of the 5 inch pan and it still worked out great! i had so much fun getting the ganashe on!

    You can camouflage flat tops with a well rounded glob of frosting.

  37. I made these! well, on a regular 9×12 pan then I cut them into tiny squares and put them on cupcake cups. Ganache was delicious, hubby and i couldn’t stop licking it off the wax paper! Day after brownies weren’t as good, i think they needed to be warmed up a bit just to get the ganache gooey again. Everyone loved them at Thanksgiving dinner. Thanks for the recipe. Cupcake pops are next! wish me luck.

Just wanted to say HI and I check your blog all the time.. LOVE the photos and wish I could take good photos of my food.. any tips? I have been drooling over your cake pops and plan to make some in time for xmas.. we can only get chocolate frosting here (and only some shops sell it) if I was to google a frosting recipe and tried making my own would it work the same as bought stuff?
