Chocolate Peppermint Cookies

I needed chocolate to offset all the turkey and dressing leftovers I’ve been eating for the last few days so I made some quick cookies on Sunday.

White Chocolate Peppermint M&M's

I blame Target and their huge end cap of seasonal Christmas candy displays for these cookies. I was shopping with my mom and walked right past these until she pointed out they were white chocolate inside.

Yes. White chocolate peppermint M&M’s. Yum.

Cookie Ingredients

So naturally, I had to buy a couple of bags. Some to snack on and some to bake with. And some to snack on while I’m baking.

Plus, it never hurts to have white M&M’s on hand for random decorating.

Mixing Cookie Dough

I used dark cocoa for the chocolate in these cookies but you can use regular, too.

Baking Cookies

Roll the dough into balls and bake.

I like to reserve some of the chips and candies to press into the balls after they are rolled so the chips aren’t all hidden inside the cookie.

It helps them look prettier and more pepperminty this way after they are baked.

Warm Peppermint Cookies

Not that any looks would stop me from warm, soft cookies. Big bites right out of the oven are always a must.

Chocolate Peppermint Cookies
Yield: Two Dozen Cookies

Chocolate Peppermint Cookies

Prep Time 10 minutes
Cook Time 12 minutes
Total Time 22 minutes

Ingredients

  • 1-1/2 cups all-purpose flour
  • 1/2 cup natural unsweetened cocoa (I used Hershey’s Special Dark)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons instant coffee crystals
  • 1/2 cup butter, slightly softened
  • 1-1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup white chocolate peppermint M&M’s
  • 1 cup bittersweet chocolate morsels

Instructions

  1. Preheat oven to 350 degrees and line baking sheet with parchment paper.
  2. Mix flour, cocoa, soda, salt and coffee crystals in a medium bowl using a wire whisk. Set aside.
  3. Cream butter and sugar.
  4. Add eggs and vanilla and mix until combined.
  5. Add flour mixture to creamed butter and mix until combined.
  6. Stir in M&M’s and chocolate chips and then chill dough for about 30 minutes.
  7. Roll into balls. (Note: reserve a few chocolate chips and candies to press into the tops of the dough just before baking.)
  8. Bake for about 10-12 minutes or until done. Cool and eat.

  13. I just wish I had read this more carefully when I first stumbled upon it. I went to grocery stores, drug stores – never any white chocolate peppermint m & ms. Finally, I see they are @ Target. I went after Christmas and stocked up. They were 50% off at that point, so there’s the silver lining :-)

  21. I made this last night and they are very tasty! The only problem I had was that they went super flat while baking? What did I do wrong? I still have have the dough can I do anything to help them. They taste great and have been disappearing quite quickly. They just don’t look quite as pretty.

I looked all over the tiny town I live in for the peppermint M&M’s but unfortunately none were to be found , so I used plain mint M&M’s.   32. I mistakenly picked up “Holiday Mint” M&Ms instead which are milk chocolate on the inside. These cookies were still amazing though! And my 8 year old daugher wants me to make them again even without the M&Ms. She just loved the chocolate cookie part that much! Definitely a keeper :)

  38. Wow. Just made these cookies for a Cookie Exchange Party with my mother-in-law and sister-in-law. I went out on a limb and tried the recipe without having tried it at home first. Everyone LOVED these!
    I used caramel instant coffee and Walmart only had Milk Choc Mint M&M’s – I put the three colors on top instead of mixing them in. They were a rich, decadent, soft cookie – so delicious.

  47. I made them and they are awesome! They do grow quite a bit, so make sure you refrigerate the dough before baking! My first Christmas cookie of the year!
