Cheesecake Bars

I was in the mood for something cold and lip-smackingly sweet. Something I could sink my teeth into. Something to maintain my weight. So I made this treat with a few of my favorite things.

Cheesecake.

Chocolate. (Hello there my friend)

and these cookies.

If you ever fly Delta, then you’ve probably had them before. They’re one of the snack options. I always get excited when the cart comes down the aisle. Time for cookies. They’re so good, I’ve started buying them if I travel other airlines because it feels wrong to fly without them.

They’re a crunchy, no-frills, sans chocolate type of cookie. Actually, I’m surprised I like them so much. But I do. Oh I do.

So I thought they would be great to use for the cheesecake crust.

Throw the cookies into a food processor and chop them up into beautiful golden brown cookie powder.

About 1 1/2 cups worth.

Then add 3 tablespoons of brown sugar.

Don’t you love how packed brown sugar looks? Even in the size of a tablespoon. Wouldn’t it be fun to have buckets of it and make brown sugar sand castles? One can only dream.

To make the crust, mix the cookie crumbs and brown sugar together. Add 6 tablespoons melted butter and combine. Place the mixture in a 13 X 9 pan and press firmly into the bottom.

Mix up the cheescake ingredients and pour it on the crust.

Oh yeah!

Then bake it at 325 degrees for about 45 minutes.

And let it cool.

And try not to eat it.

And try not to eat it.

Then whip up some chocolate ganache to pour on top.

Oh yeah.

Spread the chocolate evenly on top of the cheesecake and then refrigerate overnight.

Cut into cute little cheesecake bars…

Or if you save a few of the cookies, you can sprinkle them on top of the chocolate before you refrigerate.

P.S. … I didn’t make two pans of these cheesecake bars. That would be criminal. I just did half with and half without cookies on top.

Chocolate Biscoff Cheesecake Bars
Yield: about 30 bars

Chocolate Biscoff Cheesecake Bars

Ingredients

Crust

  • 1-1/2 cups crushed Biscoff Cookies (about 27 cookies)*
  • 3 Tablespoons packed brown sugar
  • 6 Tablespoons melted butter

Cheesecake

  • 3 (8 oz.) packages cream cheese, softened
  • 1 cup sugar
  • 2 Tablespoons flour
  • 3 eggs
  • 8 oz. sour cream
  • 1 Tablespoon vanilla

Chocolate Ganache

  • 8 oz. heavy whipping cream
  • 2 oz. butter
  • 8 oz semi-sweet chocolate
  • 1/4 cup confectioners' sugar

Instructions

  1. Crust: Mix cookies and sugar together. Add melted butter and stir until combined.
    Press mixture into a 13 X 9 pan.
  2. Cheesecake: Preheat oven to 325 degrees.
  3. Cream the sugar, cream cheese, and flour with an electric mixer on medium until light and fluffy.
  4. On medium low, add eggs one at a time, mixing well with each addition.
  5. Add sour cream and vanilla and mix until just combined.
  6. Pour on prepared crust and bake for about 45 minutes. Remove and cool. Prepare ganache.
  7. Ganache: Heat cream and butter on stove until just before boiling.
  8. Remove from stove and pour over chocolate. Stir until completely combined.
  9. Add confectioners' sugar and beat with a wire whisk until combined and smooth.
  10. Pour over cooled cheesecake. Cover and refrigerate overnight. Cut into bars and serve.

Notes

* Use the remaining cookies from the package to crumble and sprinkle over the chocolate ganache before refrigerating.

  27. It’s very funny too see how cookies can have different names from a country to another. As said several time in the comments, we call them Speculoos in Belgium and not Biscoff.
    It’s very nice for cheesecakes but also to make the crust of a crumble (pear-chocolate-Speculoos).
    The ice cream is also very nice and we’ve got two kind of spread: smooth and crunchy (little pieces of speculoos mixed with the speculoos spread).
    And one of my favourite is the speculoos milkshake!

  31. Oh no…error? I made these today for a family gathering tomorrow night and hesitated when it said “1 Tablespoon” of vanilla for the cheesecake. I didn’t listen to the little baker voice in my head that said that would be too much and added the full amount; I just tried these and the vanilla is overwhelming and leaves an off taste. I caution that 1TBS is too much!! I would go with 1/2 that amount. Hopefully my family won’t be too off-put by the vanilla/alcohol taste. (ps…the Biscoff crust is amazing!)

  39. I grew up on Biscoff when I lived in Belgium as a child. I found them on a Delta flight again about ten years ago. I recognized the taste immediately! We’ve been mail ordering them ever since. My son, now four, loves them too. They’re also WW friendly. :)

    Now you’ve combined my three favorite things, cheesecake, chocolate, and Biscoff.

    they are all over here, we call them speculoos. my mother has been dipping them into her coffee for as long as i remember. someone even made a bread spread out of it, which became very popular… and there is speculoos-flavoured ice cream too, with crunchy bits. mmm!

  122. As others have already mentioned, you can buy the cookies at Walmart and Walgreens, There are probably other places too, you just need to know what the packaging looks like to spot them. If you can’t find them anywhere near you, you can always order them from biscoff.com. It would be worth it for sure!

  133. First of all, I was thinking the exact same thing, when I saw those tablespoons of brown sugar, about making sand castles and what not. For a minute there I was dreaming away and I felt my adult self and my kid self all in harmony :) Ah, the joys of sugar!

    Like Silke said, in The Netherlands and Belgium, we know these cookies as “speculaas”. It’s been a weakness of mine for as long as I can remember, and I’ve always seen boxes of it (about twice the size of that Lotus package is a stardard box here) disappear in no time.
    When I was young, we used to have bread spread with butter and covered in speculaas cookies: Heaven!

    I started seeing jars of “Speculoos” (speculaas flavored spread) in supermarket about a year ago. I never dared buy one, cause … well… how do you stop eating it? But seeing posts pop up about people tasting and cooking with it too now.

    A couple of years ago we were in Europe and passed by the Lotus factory in Belgium – the kids in the back seat got all excited about it – unfortunately we were on a tight scedule that day and couldn’t stop to see perhaps they have a visitor’s center at the factory (probably not).

  149. I love this idea. Biscoff cookies would make such a perfect crust. Yum! Also, if you don’t happen to have access to them, it’s pretty easy to make your own Biscoff-like cookie. I made some pretty recently .

    The amazing Biscoff cookies you talk about are our national pride and joy speculaas. You find them everywhere in Belgium.
    Even the dealer Lotus is a typical family company in Belgium.

  156. I used your cheesecake recipe from an older post for my husband’s birthday cake today. It was marvelous! It probably could have cooked a little longer. And I made a “24” out of white and milk chocolate. It was my first time dabbling with chocolate decorations.. I was pretty proud. It was noticeably amateur work, but it still made me proud.

  179. Biscoff cookies are my favorites! Whenever I fly on Delta, I know that whatever is offered, I will ALWAYS choose a Biscoff cookie. I always ask for a cup of coffee, too…because the two just go together. Deliciousness! I can’t wait to try this recipe.   180. Jeanine – you can use really any crunchy cookie you like. Oreo, gingersnap, graham cracker, vanilla wafer, etc.
