Mini Easter Basket Cupcakes

I absolutely had the most fun making these Miniature Easter Basket Cupcakes. I know this idea has been done a ton of different ways before, but I couldn’t resist having a go at them. They are so sweet and make me giddy just looking at them.

Plus, I had all this Easter candy that I had to do something with.

Easter Candy

Mini Chocolate Bunnies, candy eggs, sour patch straws and mini chocolate candy bars. (Can you say sugar coma.) The bunny candy to the right came from The Fresh Market. And, the Twizzlers made it in this photo, but not on the cupcakes. I’ll have to save them for later.

Intense

Here’s some of my favorite baking cups. I loooooove the opaque color of these. You can get them at the Confectionery House.

Polka Dot Cupcake Liners

Their color isn’t as opaque after baking, but the dots sure do make up for it. Also from the Confectionery House.

So, if you have a bunch of easter candy handy, get busy and go make some cupcakes. I made chocolate.

Eye Candy Chocolate Cupcakes
Yield: three dozen cupcakes

Eye Candy Chocolate Cupcakes

Cook Time 15 minutes
Total Time 15 minutes

Ingredients

  • 2-1/4 cups all-purpose flour
  • 2/3 cup cocoa
  • 1-1/2 tsp baking soda
  • 1-1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups sugar
  • 3/4 cup unsalted butter, room temperature
  • 3 eggs, room temperature
  • 1-1/4 cup milk, room temperature
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350 degrees.
  2. Prepare cupcake pans with 36 baking cups.
  3. With a wire whisk, sift together flour, cocoa, baking soda, baking powder, and salt in a large bowl and set aside.
  4. In a mixer, cream sugar and butter.
  5. Add eggs one at a time, scraping down sides with each addition. Add vanilla.
  6. Add flour mixture to the creamed butter in three additions, alternating with the milk in two additions. (flour, milk, flour, milk, flour)
  7. Bake for about 15 minutes or until done. Cool and frost.
They were pretty good, but I’m still looking for my “go to” chocolate cake recipe.

Then, I made some yummy buttercream frosting and tinted it green. (Here’s a recipe.) You’ll want to double it at least if you decide to frost all 36 cupcakes.

Use a generous amount of frosting. It doesn’t have to be too pretty.

Then dip the sides of the frosting in a small dish filled with sugar crystals or sanding sugar. You don’t have to cover the center area because that’s where your chocolate bunnies will go.

Sour Punch Strawberry Straws

You can use these super cute Sour Punch Straws for the handles. Just insert into the cupcake on each side. (They also come in green.)

Lindt Chocolate Bunny Basket

Then cover your cupcakes with candy. EASY!

I love the look of these Lindt chocolate bunnies.

Heidl Mini Candy Bars

And I looooooove these super tiny Heidl candy bars. (But, I’m a sucker for anything mini if you haven’t guessed that about me already.)

Candy Covered Cupcakes

Decorate each one differently to give them more personality.

Then, you can package to give away as individual treats.

Cute or What?!

To get these to stand up, cut out some white cake board to fit the bottom of a plastic treat bag (These were 5″ X 11″ X 3″ from Hobby Lobby). Apply a small amount of frosting to the center of the board to help keep the cupcake from sliding back and forth. I just wish these bags weren’t so wide. I had wanted them to be closer to the width of the cupcake.

But, not to worry. Nobody I gave them to cared one little iota about wide cardboard.

See what I mean. You know, I didn’t even notice his excitement when I took this picture because I was focusing on the cupcake. I can’t even stand how sweet this expression is.

  11. I saw these on google not realizing that they were from this site. I made them at Easter and it was a huge hit. I did do a few things different tho…..I put Ganoche (sp) inside the yellow and chocolate cupcakes and then to tell the difference between them I made chocolate handles for the chocolate cupcakes. It made it interesting and fun. I do like however the wrapping them up individually. I will have to do that next time.

  13. Hey, you could put a thin layer of frosting and then roll out a ton of green peeps and cut them into circles instaed of the sugar and butter cream.

  16. These are precious. I’ve never seen those candy straws anywhere but then again I haven’t looked for them. The kids will definitely get a sugar rush from eating these but will enjoy every minute of it. Thanks for sharing.

  18. Made these last night, and they are really cute when you make them. But, if you are going to take them somewhere, make them just before you go. If you leave them overnight, the sour punch straws break! It could just be the Texas humidity, but beware! Luckily, I had enough time to run out and buy more sour punch straws.

I tried to read through your comments, but man, you have a lot! :) My friend lisa made Easter basket cupcakes too and used waffle cone bowls as the cupcake liner. Super duper cute. Not that yours are lacking in cuteness. . . seriously you are the queen of cute.

    I’m surprised to see that they have Heidel chocolate in the states. I live in Luxembourg and bought it here. Funny how everything is available all over the world.

  76. When I made my St. Patrick’s Day cake pops I didn’t want huge bags like the ones I was finding. I went to the craft section of my local dollar store and found tiny ziploc bags in various sizes that you’d use for beads. I snipped the zipper part off 50 bags in minutes and voila! Perfect size for my needs. Another option is cutting the top off those fold/lock sandwich bags. They’d be cute done with pinking shears or another scrapbooking type of scissors.

  82. We made these for our church social yesterday and it was almost (I said almost…) embarrassing how much attention they got. The kids squealed with joy! I gave you full credit for the creativity and hope you have a ton of new readers.

    BTW, we got our Sour Punch Straws in the candy aisle at our local CVS Pharmacy. You’ll need 3 packs for 24 cupcake – there are about 10 straws per pack.

  84. I made these to bring to the Easter dinner I was invited to. They were a big hit. People on the train asked me about them. Someone at my subway stop tried to buy one from me. Everyone at Easter dinner squealed over them.

    The one thing I changed was I colored shredded coconut green, and used that instead of sanding sugar. I had 1/2 a bag of coconut on hand already, and wanted to use it up. ‘Twas cute.

  88. Oh, one more thing. I saw a great hint about cupcake liners on TV. You just bake the cupcakes with the cheap liners and then put one of the pretty liners over the first one after it has baked. I’ve done it and it works great!
