The Pioneer Woman knows her stuff

The Best Chocolate Sheet Cake

This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.

I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.

If you don’t know who I’m referring to (laughing as I type that), here’s her site:

www.thepioneerwoman.com

I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.

But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…

It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.

Including her Chocolate Sheet Cake.

The Pioneer Woman Cooks

That settled it. No more procrastinating. Chocolate Sheet Cake here I come.

You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.

Sugar

Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.

Butter

Melt some butter. Two sticks. Thank you.

While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…

Vanilla

And add a little vanilla. A teaspoon to be exact.

Cocoa

Back to the butter. Drop in four heaping tablespoons of cocoa please.

Mix it up

Mix that all up.

Pouring 3

Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.

Pouring 2

Then pour that over your flour, sugar and salt mixture and stir it all together.

Pouring 1

Add the buttermilk mixture and stir until it’s smooth.

Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.

Batter

See… here’s another one. Look at that batter. It’s glorious.

Sheet Cake

Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.

And while the cake is baking, you can make the icing.

Butter and cocoa

Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.

Milk

Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.

Powdered Sugar

Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.

Yum

Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.

Pour it on

After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.

Scoopable.

Let the cake cool completely. Just kidding. Just dig right in.

It was the…

For me

Wait… I need another bite to make sure.

It was the…

Sheet Cake

Best chocolate sheet cake ever.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

Man, I really wish I had some milk right now.

Chocolate Sheet Cake

The cake was so good, that I had to take a picture of it on this pedestal. Right where it belongs.

Bitten

Make this cake. Now. Seriously.

Here is the full recipe from the Pioneer Woman to make things easier for you to follow.

You can contact me at thefancher04(at)hotmail(dot)com

  16. I love PW! I made “Marlboro Man’s Favorite Sandwich” for non-Cowboy husband of mine. He totally loved it! Her “Grandma Iny’s Prune Cake” was yummy too! I would like to see you try the Prune Cake recipe too :)

  17. oh, PW…she is bookmarked just like you! i tried her onion strings, and even though i did not have the proper thermometer and suffered all the frying errors that come with that, they were still REALLY good…good enough for me to go buy the correct thermometer!

  18. Yes. I LOVED her crash potatoes – the recipe she got from Australia.. SOOO GOOD.. Made the boy swoon for a change too ;)

  19. I LOVE the Pioneer Woman. So many recipes, so little time…Would love to have her book!

Do try that cake again sometime and add 1 teaspoon cinnamon when you add in the baking soda. It adds that little something you can’t quite place, but know you love.

  20. My vote would be for the yellow cupcakes with sticky chocolate icing, to compliment the amazing sheet cake.

  21. Not sure if I can choose just one of her recipes as my favorite because several are a regular addition to our meals here! In fact, haven’t tried one I didn’t love yet!

  22. This is My favorite Cake ever! I make it when I am having a bad day, a good day, an OK day. Thanks PW and Bakerella for Sharing it with me! I would LOVE her book!!!

  23. I’m always up for another great cookbook.

  24. Oh Bakerella, you DID introduce me to PW- back when you posted about your trip to The Lodge- and I fell in LOVE! Yes, with PW, and I’m not ashamed to admit it! LOVE her writing style, photography, her Punks, her Marlboro Man. ;-)

But I have yet to try one of her recipes. FOR SHAME.
I need to win her cookbook to start baking off some of my guilt.

  25. I LOVE that cake recipe! It is amazing. I use a knife to poke approximately 327 holes in the top of the cake before pouring the icing over the top. It soaks into the cake and makes it oh-so-yummy.

  26. Love following your recipes you post! Amazing pictures, such an motivator for me to get into the kitchen!

  27. You should try the Blue-cheese onion cheese sauce that goes with the steak. Then you would have a dinner and a beautiful dessert!

  28. I’ve tried her pasta with eggplant recipe and it was amazing. A big hit with the entire family!

I’m thinking that I will now have to try that chocolate cake recipe, yum!

    bentoforkidlet@yahoo.com

  30. I’ve tried many recipes from her site, including this sheet cake one. Yum! I love the “bacon wrapped jalapeno things”. I know you’re more of a sweet gal, but man these are yum…..

    Jodi

  32. I tried the Crash Hot Potatoes and they are AWESOME! If you like potatoes, you have to try them!

  33. I’ve never tried any of PWs recipes, but have checked out her site – I like a lot of the simplicity in her cooking (not a whole lot of obscure ingrediants). You should try adding cinnamon to the recipe for a little extra something – that’s how my mother-in-law does hers and it’s excellent.

  34. I can’t wait to try this sheet cake recipe! My husband’s grandma used to make one for him while he was growing up. So I think I need to have a version of it too, hope he loves it!

  35. I have to say her fettuccine alfredo and her Marlboro Man’s Sand-which whooooo

  36. Thank you for introducing me to The Pioneer Woman… I’m looking forward to checking out her new book and trying new recipes.

Oh, by the way, I just tried making your Cupcake Bites this morning, not too shabby for a first try. But definitely not as nice as yours… :)

  37. I haven’t tried any of her recipes yet, but I’m very curious about her recent acorn squash recipe….I will scream if I win this cookbook! I never win anything!

  38. I have made this sheet cake just once so far and it was easy and unbelievable. It melts in your mouth. I just bought a copy of PW’s beautiful cookbook and had to buy a pretty bookstand to display it on my countertop. PW would be so proud! Problem is now every woman who comes into my kitchen thumbs through it and wants one. I keep writing names down thinking – Christmas Gifts! What a great idea! So I would love to win a cookbook to share with a special friend.

  39. I make her steak bites (slightly modified) on an almost weekly basis. Love the apple turnovers, too!

  40. Apple tart! Puff pastry, apples, brown sugar. So simple, like her cake! So divine, like her and her cake, both!

  47. Okay, so I just found The Pioneer Woman this weekend and I’m so excited to start reading her blog and now I keep hearing about this cookbook. I was excited to see a recipe on your blog….then I kept reading….and here you are giving a copy away!!!

  48. I’ve tried one of her pasta dishes. Can’t remember which one, but it was good! I really want to make everything, my tummy says “yes, make that!” while my brain says “whoa, that’s a lot of butter!”

  49. I love PW. I have made several of her recipes and loved them with the exception of one. Not bad in my (cook)book! But have to say the cinnamon rolls rock!
I’d love a copy of her book. Thanks for the offer.

  50. I have made a couple of her recipes — none of them were her sweet ones, though, which also look delicious, but I’m so bakingly handicapped that I still don’t own a mixer, not even a hand-powered one, and I hate to whisk things with a flatware fork or spoon until I get the consistency of batter that I’m satisfied with. Wow, that was a mouthful! Anyway, I’ve made her pico de gallo, and then there was one recipe she posted that uses blue (bleu?) cheese and Pillsbury Grands biscuits. Yummy stuff! Thanks for this fun contest!

  51. I’ve never tried her recipes, but not for lack of wanting to. You must try the cinnamon rolls out soon!

  52. I just love her…oh poo…I can’t remember the name of it, but it is apples and you pour Mountain Dew over it.

    It should be a crime.

  53. As a pastry student, I have to try new recipes all the time…I have never seen her website but you better believe I am going to try THIS recipe…the pouring photos make it all that more exciting!!!!! =]

    dr.acula_bites@yahoo.com

  58. I’ve tried several of her recipes. My favorite is Roasted Garlic Mashed Potatoes.

  59. That sheet cake recipe is my trusty stand by! I have used it to make sheet cake, cup cakes and even those gorgeous mini cakes you do with the cookie cutters and stack them? Anyways, another fave of hers is a) Cowboy Nachos. Oh be still my beating heart… AND her Sleepin’ in Omelette. SO GOOD when you have people staying the weekend and you know dinner the night before is going to be a long.. ahem.. jovial night :)

  60. Thank you for introducing me yo PW. After checking out her site I will be checking in with her often!

  61. I only know PW through you, but that chocolate cake is in my future. (My hips probably are not too fond of you, but I LOVE your blog.)
I would love to win the cookbook!! PLEASE!

  62. I LOVE PW! She is great, and has so many great recipes. So far I have made the following: bacon jalepeno bites (yum!), pots de creme (sooo rich!), lasagna, and then also some recipes from Pastor Ryan: the Bolognese sauce, homemade pasta and Blooming herb bread. So far, everything has been amazing, but Ryan’s recipes that he shared were so amazing, I made them two nights in a row. YUM!

    Patricia M.

  69. I love her rosemary-onion bread! Everything that I have tried from her site has been great, but the rosemary-onion bread has been repeated several times…

  70. LOVE her website and made the Pumpkin Chocolate Chip Cookies just this afternoon from the Tasty Kitchen part of her site…. there is a recipe for Apple Dumplings that is next on my list and of course now this cake looks so good!!!!!!!

  71. Meatballs, mashed potatoes with cream cheese, migas, chicken spaghetti, pasta a la Betsy, blackberry ice cream…those are just a few of the many I have tried. Every recipe of The Pioneer Womans that i have tried is fabulous!

  72. Thank you for introducing me quite some time ago to pioneer women! I think I’ve looked at every recipe she has- and of course have most of them on my list to make someday…

However!!!! I found her sushi ‘tutorial’ very very very helpful! I love sushi and started making it at home quite some time ago, and I knew it didn’t quite taste like the restaurant kind, and she helped me figure out why! When I saw sushi on her page, I was blown away! Didn’t expect that one!

(ps. I would love the cookbook! And I think most of your followers are waiting for a Bakerella cookbook!)

  73. Love PW. I am going to her book signing at Border’s near Lenox Mall. :o)

Her mashed potatoes, hot crash potatoes and macaroni and cheese are my all time favorites. I plan to make her turkey for Thanksgiving this year as well. I did try to make this cake but I didn’t do so well, but want to try it again. I also want to try her Tres Leche cake. Mmm.

  74. That cake is soooo delish! All of the kiddos in the family now ask for it for their birthdays!

I would love a copy of the cookbook!

    Jen in OK

  75. That looks soooooo good! I could always use a cookbook!

  76. mmm. exciting. hope i win.
i’ve heard many a marvelous things about her new pumpkin spice muffins with cream cheese frosting. those seem totally up the bakerella alley and perfectly seasonal. maybe you could try those.

ps. but i would also recommend bbq meatballs, roasted potato wedges, and marlboro man’s favorite sandwich.

  77. this looks amazing! I need a PW cookbook

  78. I’ve tried Marlboro Man’s favorite sandwich (and I know why it is). I’ve also done her pasta alla vodka, and I must add a disclaimer NOT to use cheap vodka. Mine did not turn out very good. Also, the peanut butter pie = paradise on earth.

  79. DONT CHOOSE ME! I already have a copy! I love her too and you are right, it IS the best chocolate sheet cake ever and it IS a lot of cake, but cut off a huge piece and give it away! That is what I do. Because I WILL eat the whole thing. It is that good.

  80. I love PW! I’ve tried several of her recipes but her mashed potatoes are my absolute FAVE.

  81. geez, what recipes haven’t i made??

if we are sticking to baking….then it’s gotta be her rum cake. it’s not only good for christmas either…we like it at birthdays and for breakfast…..LOL

but my family would highly recommend her best ever lasagna, her pot roast, her only casserole marlboro man will eat, her roasted potatoes and garlic…..and the hits just keep coming!

    thanks for the contest. :)

  83. I have made her cinnamon rolls a few times – they are so yummy! I would love her cookbook!

  84. LOVE her site- found it first for photography.
OK, Have done the lasagna, simple sesame noodles and the apple dumplings. All great but loved the noodles and dumplings more than the lasagna. Of course I love noodles and these were so easy and use all of my favorite asian ingredients. The apple dumplings were awesome hot out of the oven — never thought of using Mountain Dew in them before. Laughed at myself for using diet Mountain Dew because they are NOT LIGHT in any way. :)

  85. I love PW’s site. Her smashed hot potatoes, cowboy sandwich and rosemary rolls are delicious, along with just about every other recipe I have tried :) PW’s site is how I found Bakerella :)

  86. Bacon wrapped pineapple (hands down). I made this for my brother in law’s birthday and they didn’t even last long enough for the party. They were DELICIOUS and simple.

  87. Oh, that is the best recipe ever. YUM!

I have tried (and love) the crash hot potatoes, blackberry cobbler, blackberry ice cream, some lasagna, etc, etc, etc

  88. You must, must, MUST try PW’s French Onion soup. So amazing.

  89. I love cinnamon rolls so I would want to try those first….yum!!

    Hope you enjoy

    MuslimMurphy at gmail dot com

I’ve tried her Roasted Garlic & New Potatoes; yum, yum, YUM! I can’t wait to try her other recipes…

  95. Me Me!!! We have tried two recipes (so far!): her lasagna and her bbq meatballs. They both are d.e.l.i.s.h. Hubby asked me what’s next…gonna try her meatloaf. Didn’t know it until today, but she is also in November’s issue of Southern Living! I love how her recipes are foods that we would actually eat~nothing fancy!

    xo

  96. I love PW! This cake is sinfully delicious. It sounds unappetizing, but her prune cake recipe is actually really really good.

  97. I have not tried any of PW recipes but I do love her blog!! That chocolate cake looks delicious!!

  98. PW gave me the courage to conquer that horribly frightening panic-inducing stuff called YEAST. My husband is especially grateful for having Rosemary & Onion in his life.

    3 CHEERS FOR P DUB!

And one for Charlie for being so dang CUTE…

  104. I really enjoy both of you gals and your talents!! I would LOVE to have her cookbook :) I make her ck spaghetti and get lots of compliments. You have to try it!

  105. I check her site every day! I made her pasta salad with the kalamata olives to take to a 4th of July party and I made her guacamole and pico de gallo recently. I just love looking at her food and the photos of how to make it!

  115. I love Ree! I have not made any of her recipes but drool everytime I read any of of recipes and have gained weight just by looking at them and all that butter!

  116. There’s not really anything I have tried from her site that I did not love. I’m thinking about the brisket right now!

  117. Would love a copy of the PW cooks. I need some inspiration to cook some of the good stuff!

  118. Her whiskey glazed carrots are to die for! I would love a copy of this book. it’s currently on my Amazon Wish List!

  119. I’ve tried a few (bacon-wrapped jalapenos, lemon pasta), and there are several more I’ve been wanting to try. My friend already bought the book and said it is fantastic! Would be fun to go to the book-signing together!

  120. OK, so if you have a man in your life, you have to make “Marlboro Man’s Favorite Sandwich” for him. Trust me ~ he will fall in love with you all over again!

    So good!

  121. I have not heard of Pioneer Woman before but I am soooo glad you introduced her to me. Her recipes look wonderful and since I am a chocoholic I am going to try this cake first. Thanks!

  122. Oh, I so need her book!

Definitely the cinnamon rolls. I made them just this week! They are FAB-U-LOUS. And the dough makes great, soft rolls too (I made her rosemary rolls in a cast iron skillet she posted this week, too!) Mmm….

  123. I have not tried Pioneer Women, in fact I forgot about her until now. The cake looks delish, and I’ve bookmarked PW’s site to look at from now on. Thanks!!

  124. Oh man, I’ve heard people mention her before, but I’ve never been to her site. But that cake looks so good, I might have to add her to my favorites! I LOVE to bake and I would love to win this cookbook!

  125. I have made her cinnamon rolls and they were yummy! She has lots more recipes that I would like to try!

  126. I wanted to make your 14 layer cake for my birthday, but this sure seems tempting too..mmmh maybe I’ll just have to celebrate my birthday with the PW chocolate sheet cake later this month since it is my birthday month, right? Oh and the cookbook looks pretty and pretty amazing.

  127. Her jalapeño bacon party poppers! So tasty! I made them for my brothers high school graduation party. We had a bacon theme. We also made the crackers wrapped in bacon. An 80’s appetizer. I made your graduation reese’s caps. Obviously a successful party!

  128. I love the PW and Bakerella! You are both big time inspirations to me.

And yes, the chocolate sheet cake is the BEST! It’s now the only cake my three kids request for their birthdays. :)
