Toffee Bit Butterscotch Choc Chip Cookies

These cookies are just as tasty as they look. I made them a couple of weeks ago and I wish I had about a dozen of them right now. I think they’d do just the trick to cure me of this cold/cough/grossness that I’ve had for the last several days. I’m super tired of feeling under the weather, but I’m getting better… at least good enough to get on the computer to finally post these yummies.

Chips and bits. A tiny ton of chocolate, toffee and butterscotch goodness, baby.

This cookie dough totally makes me want to grab the biggest spoon I can find.

Just don’t get carried away tasting… gotta make sure to save enough spoonfuls to bake, you know.

Toffee Bit Butterscotch Cookies

Toffee Bit Butterscotch Chocolate Chip Cookies
Yield: About 36 cookies

Toffee Bit Butterscotch Chocolate Chip Cookies

Prep Time 10 minutes
Cook Time 12 minutes
Total Time 22 minutes

Ingredients

  • 2-1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1-1/2 cups chocolate chips
  • 1 cup toffee bits
  • 1 cup butterscotch chips

Instructions

  1. Preheat oven to 375 degrees fahrenheit.
  2. Whisk flour, baking soda and salt together in a medium bowl. Set aside.
  3. Beat butter and both sugars in mixer for several minutes until light and fluffy.
  4. Add eggs and vanilla and mix until incorporated.
  5. Add flour mixture and mix on low until combined. Stir in chocolate chips, toffee bits and butterscotch chips.
  6. Place spoonfuls of dough onto baking sheet 2 inches apart.
  7. Bake for 9-12 minutes.
Melty Chocolate Chips

Enjoy all the bits and chips in every warm and melty bite.

    Try refrigerating the dough for a couple of hours 1st & baking cold. or you could up the flour a little to make the cookie a little more “cakier” & less chewy.

  18. These look great! I’d substitute the sugars for some coconut palm sugar and use some dark chocolate chips for when I make them and let you know how it turns out. Thanks for sharing.

  35. Thanks for this recipe. Looks yummy! Reminds me of my latest happy baking “make-do:” I was mixing dough for regular chocolate chip cookies. I realized I didn’t have enough chocolate chips (OH NO!), so started rummaging around in the cabinet. I found an open bag of toffee bits, so poured those in with the chocolate chips I did have. Oh. My. Goodness. I will never bake another regular old chocolate chip cookie again. The toffee bits made them amazing.

  37. I’ve been making these at least once a month using the Toll House recipe and I add the toffee bits and butterscotch chips, too – the guys in the office are crazy for these! I also sometimes add coconut – the exposed coconut gets toasty when the cookies are baking in the oven. YUM!
