Butterscotch Brownie Bars

Undecided. I was in the mood for chocolate this weekend. Wait. When am I not in the mood for chocolate? Like never ever. But, besides something chocolatey, I also wanted something butterscotchy – probably influenced by the opened bag of butterscotch chips on my counter – twisting my arm to eat a couple each time I walk by. I couldn’t decide which one I wanted more. So instead of choosing one, I chose both… in one big brownie. Indecisive is good.

Ingredients

Starting off the year right. Chocolate. Brown sugar. Butter. Butterscotch chips. Oh baby.

Mixing

Brownies are about to happen.

Whisking

Batter up.

Butterscotch

Butterscotch too. Win. Win… for me and you, too.

Butterscotch Brownie Batters

Spread the brownie batter first and then add in the butterscotch batter.

You could also drop big spoonfuls alternating between each.

Swirled

Give it a swirly swirl.

And bake away.

Rippled

When done, you can cover them in more chocolate… of the ganache variety.

So easy and so good. Butter, heavy cream, chocolate and heat. Hello 2013.

Sprinkle a few extra butterscotch chips on top.

Now this may sound like crazy talk for me, but I ate a few bites of these without the ganache and I enjoyed them even more.

What’s wrong with me… less chocolate?

Butterscotch Brownie Bars

Servings: 24 bars

Ingredients

  • BUTTERSCOTCH
  • 1 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 cup butterscotch chips
  • CHOCOLATE
  • 3/4 cup all purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 5 oz. bittersweet chocolate
  • 1 1/2 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 cup bittersweet chocolate chips
  • GANACHE
  • 12 oz. semi-sweet chocolate chips
  • 3/4 cup heavy cream
  • 6 Tbsp butter

Instructions

  1. Preheat oven to 350 degrees and grease a 9X13 pan.
  2. FOR THE BUTTERSCOTCH BATTER: Mix flour, baking powder and salt together in a medium bowl using a wire whisk. Set aside.
  3. In a mixer, beat butter, sugar, and vanilla together until creamy.
  4. Add eggs and beat until blended.
  5. Gradually beat in the flour mixture and then stir in butterscotch chips.
  6. FOR THE CHOCOLATE BATTER: Mix flour, baking powder and salt together in a medium bowl using a wire whisk. Set aside.
  7. Melt butter and chocolate in the microwave. Stir together until smooth.
  8. Add sugar and stir with a wire whisk until combined.
  9. Whisk in eggs and vanilla until combined.
  10. Stir in flour mixture until blended and then stir in chocolate chips.
  11. Spread chocolate batter in prepared pan. Drop spoonfuls of butterscotch batter on top and use a knife to gently swirl the two together. Don't mix too much.
  12. Bake for 35-40 minutes or until done. If the top starts to get too dark, place a sheet of aluminum foil over the pan for the last 10 minutes.
  13. When cool, spread ganache on top. Let set for a few minutes before sprinkling butterscotch chips on top.
  14. FOR THE GANACHE: In a small saucepan, heat butter and cream. Remove from heat right before it starts to boil and pour over chocolate chips. Let stand for about 20 seconds and then stir until completely blended and smooth.

I have a bag of cherry flavored chips by Log House that I found on Amazon – I think I’ll do some substituting with your fantastic recipe and use the cherry chips in the light batter and use white chocolate chips in the chocolate batter, or the other way around?   40. I love butterscotch, but we are a little behind the eight-ball here in New Zealand as we don’t have the same huge range of different flavoured choc-chips like the US does. But I found a new product a little while ago called ‘Caramel Bits’ by Nestle which taste almost the same as butterscotch (and they are in Australia as well).
