Undecided. I was in the mood for chocolate this weekend. Wait. When am I not in the mood for chocolate? Like never ever. But, besides something chocolatey, I also wanted something butterscotchy – probably influenced by the opened bag of butterscotch chips on my counter – twisting my arm to eat a couple each time I walk by. I couldn’t decide which one I wanted more. So instead of choosing one, I chose both… in one big brownie. Indecisive is good.
Starting off the year right. Chocolate. Brown sugar. Butter. Butterscotch chips. Oh baby.
Brownies are about to happen.
Butterscotch too. Win. Win… for me and you, too.
Spread the brownie batter first and then add in the butterscotch batter.
You could also drop big spoonfuls alternating between each.
Give it a swirly swirl.
And bake away.
When done, you can cover them in more chocolate… of the ganache variety.
So easy and so good. Butter, heavy cream, chocolate and heat. Hello 2013.
Oh my ganache!!!!! Glorious.
Sprinkle a few extra butterscotch chips on top.
Okay, a couple more.
Then cut in cute, little – I mean big beautiful bars.
Yum! Yum! Teeth sinking yum.
Now this may sound like crazy talk for me, but I ate a few bites of these without the ganache and I enjoyed them even more.
What’s wrong with me… less chocolate?
Let’s just call that the diet version.
Butterscotch Brownie Bars
- 1 cup all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter, softened
- 1 cup packed brown sugar
- 2 eggs
- 1 tsp vanilla
- 1/2 cup butterscotch chips
- 3/4 cup all purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/2 cup butter, softened
- 5 oz. bittersweet chocolate
- 1-1/2 cups sugar
- 3 eggs
- 1 tsp vanilla
- 1/2 cup bittersweet chocolate chips
- 12 oz. semi-sweet chocolate chips
- 3/4 cup heavy cream
- 6 Tbsp butter
- Preheat oven to 350 degrees and grease a 9X13 pan.
- FOR THE BUTTERSCOTCH BATTER: Mix flour, baking powder and salt together in a medium bowl using a wire whisk. Set aside.
- In a mixer, beat butter, sugar, and vanilla together until creamy. Add eggs and beat until blended.
- Gradually beat in the flour mixture and then stir in butterscotch chips.
- FOR THE CHOCOLATE BATTER: Mix flour, baking powder and salt together in a medium bowl using a wire whisk. Set aside.
- Melt butter and chocolate in the microwave. Stir together until smooth.Add sugar and stir with a wire whisk until combined. Whisk in eggs and vanilla until combined.
- Stir in flour mixture until blended and then stir in chocolate chips.
- Spread chocolate batter in prepared pan. Drop spoonfuls of butterscotch batter on top and use a knife to gently swirl the two together. Don't mix too much.
- Bake for 35-40 minutes or until done. If the top starts to get too dark, place a sheet of aluminum foil over the pan for the last 10 minutes.
- When cool, spread ganache on top. Let set for a few minutes before sprinkling butterscotch chips on top.
- FOR THE GANACHE: In a small saucepan, heat butter and cream. Remove from heat right before it starts to boil and pour over chocolate chips. Let stand for about 20 seconds and then stir until completely blended and smooth.

Made these yesterday but I topped them with the ‘frosting’ I use for Scotcheroos — 3/4 cup butterscotch chips + 3/4 cup choco chips melted together and spread on top. YUM!

I’ve been craving butterscotch so much lately and now I want it even more :) I love how you swirled it in! It’s like an art :)
these look great. Wish I had some right now.
Yum and Yum. Bakerella you have such a fun and inspiring tone of voice.
I love butterscotch, but we are a little behind the eight-ball here in New Zealand as we don’t have the same huge range of different flavoured choc-chips like the US does. But I found a new product a little while ago called ‘Caramel Bits’ by Nestle which taste almost the same as butterscotch (and they are in Australia as well). Thanks for another great recipe Bakerella! xx
You are SO NOT helping me try and be better with my junk food intake! Those look like Heaven!
You are seriously the most AMAZING food photographer. This blog entry is a perfect example of why your blog is so popular. Amazing!!
I have a bag of cherry flavored chips by Log House that I found on Amazon – I think I’ll do some substituting with your fantastic recipe and use the cherry chips in the light batter and use white chocolate chips in the chocolate batter, or the other way around? Problematically delicious decisions! Maybe later I’ll also try peanut butter chips, or mint chips! The variety just goes on – THANKS!!! ;)
I’ve actually never had butterscotch before – but seeing these brownies I’m sure it’s delicious and now I’m so hungry for brownies and I’m meant to be dieting….curse you! :D
I gasped when i saw the link on facebook. They look too delicious for words. Amazing!
All New Year’s Resolutions should start with butter, brown sugar, chocolate, and butterscotch – way to start the new year off right, these look amazing1
Wow, I love chocolate and butterscotch, so I’m SURE these would be incredible!!
Butterscotch and brownie.. talk about the best of both worlds. When there is a bag of butterscotch chips open… it will be gone in a few hours with me. They’re addicting!
OMG those look GREAT :D I think you like it without the ganache because they are so sweet already :D
Looks sooo god! Jummy
I still have a batch of brownies sitting ny the counter and now I see this! Brownie fever is sooo on! Thanks for sharing Angie! Have a great week ahead!

Currently pregnant and the baby and I both agreed we “need” to make these… Of course I have my glucose test coming up so I think we’re going to have to wait until after my test! :(
I want to make these, but I am out of eggs, brown sugar, and almost out of flour. I’ve been baking so much!

I have been in throes of agony all week trying to think up something I’d want to throw a pile of chocolate ganache on…considering how I just consumed an entire stack of See’s butterscotch hard candies today with no problem, I think this recipe will fit the bill quite nicely. Thanks a bundle for sharing!
These look so… *drool*
But I don’t eat butterscotch. Can peanut butter chips be substituted? Thank you so much!
Oh my God! So delicious! Yum! Bye, Lu
