Cake… Three Ways!

Mini Cakes

I love cake! And, by now you guys should know I love things little, too. So, I made some mini cakes using my new favorite moist yellow cake recipe. Actually I made 9″ cakes and used a round cutter to make them mini. Two layers will get you six 3 7/16″ cake circles and two smaller circles. Here’s how one of the layers looks all cut up.

And here they are stacked. They’re so cute… even without any frosting. (Don’t worry the scraps made it safely to my tummy.)

But, who would serve a naked cake. So here it is fully clothed in luscious white buttercream frosting. Hold me back!

Three Mini Cakes

I started out making the fondant covered cake that’s on the pedestal (inspired by a pillow fabric from an old Pottery Barn catalog. Yep… I love their stuff.) Then, I made the second one using decorator icing bags and tips. Then I got tired and just slapped some buttercream all over the last one. And, I have to admit, I think it’s my favorite. But, tell me what you think.

    Sassy probably is closest to my style of cake decorating (with some messy thrown in), since I usually decorate for my girls’ birthdays. But the classy is so pretty and I wish I could do that!!!!!

    For my baby’s 1st birthday I am making her smash cake using the great Williams Sonoma 7″ kids round cake pan.(can’t wait) It is a glittered snowflake theme. Should I do a Big Fondant snowflake on top with sugar crystals covering the cake? I’m just not a cake maker. But I really want to be. You inspire me greatly! I just don’t know what materials to use. These mini cakes you make here would be a cute idea too.

    Any suggestions or Ideas?

  42. Christmas Pops! Can’t wait to see those, but I digress…My style would be MESSY — the frosting on the picture looks so good, that you just have to want to eat that cake. The others are nice, but I don’t want a cake that looks too good to eat!

  50. Hate the taste of fondant (plastic-like). I LOVE chocolate ganache frosting drizzled all over the top so it runs down the sides and pools on the cake plate.

If I were at home enjoying the idea of cake, the messy one would get my vote (maybe with some HUGE chocolate curls or coconut shavings…yum!), not that with my three boys it would last long enough to take a photo of.

    The Sassy one, if I felt a little romantic. Not that I have time for that around my boys!

    And the Classy when its a special occasion and I am trying to impress someone! Not that my boys would notice the details and hard work!
