Perfectly Peanutty!
Pretty, peanut butter cookies with just five ingredients:
1 cup peanut butter
1/2 cup sugar
1 egg
4 oz. Baker’s semi-sweet chocolate, melted
1/2 cup finely chopped peanuts
That’s my kind of recipe!
- Preheat oven to 325. Mix peanut butter, sugar and egg until well blended.
- Refrigerate for 30 minutes.
- Remove and roll mixture into 18 balls.
- Place on ungreased cookie sheet 2 inches apart.
- Flatten each ball by using a fork to make a criss-cross pattern.
- Bake 18-20 minutes or until lightly browned.
- Cool for 5 minutes on cookie sheet and then cool completely on a wire rack.
- Melt chocolate.
- Dip one end of cookie into melted chocolate and then dip into chopped peanuts. Repeat with other side.
- Place on wax paper covered cookie sheet and refrigerate until chocolate hardens.

I make pb cookies like that too! Well, not dipped in chocolate and nuts, but with only those few ingredients. My recipe has double the amount of sugar, and a teaspoon of vanilla too. I love how easy it is!
Definitely gonna have to try dipping in chocolate and peanuts, that looks so deliciously amazing!

Wow! Those look amazing. I have a similar recipe. After you roll the balls, coat them in sugar then press an extra large chocolate chip or small Hershey kiss in the center. I’m also in love with your cake balls and can’t wait to give them a try.

This comment is for the cupcake pops, not the cookies…I am making them for the first time today for my sister’s baby shower, and I could only find the wilton 1.5″ flower cookie cutter… I didn’t see it on your instructions, but I figured out (after gooey hands and 2 batches) that if you’re going that big with them, it is easier to chill the mixture right after adding the cream cheese icing, and then use a 1″ ice cream scoop to get uniform sizes! I laid the cookie cutter on a bit of wax paper, rolled the ball into a sort of rod (like you said to), and then gently pushed it down into the cutter. They come out nearly perfect looking each time!
I believe this question may have been asked before but now I can’t find it! Maybe you should make a FAQ for her blog :)
Anyway, Question: What type of camera do you use for your photos. They are gorgeous and just make me want to try every recipe!
After readin all the comments there is not much left for me to say. BUT, hey that is a great idea, we do something the same with a Lions Christmas Fruit cake. Crumble it mix with brandy and condensed milk roll into balls and cover with chocolate nonparils , put in silver small cases leave for a month in the fridge then take out for the festive season.
Now these are SEXY peanut butter cookies…who knew that they could be ‘sexy’??? Amazing and inspiring!

I used white chocolate chips for the dipping–mainly just to use ’em up. I hate the taste of the chips alone, but combined with peanut butter they proved delicious! Now I only have half a bag of those gross “chocolate” chips to go, and with this recipe they’ll be put to good use, fast!

This is a great recipe but my cookies turned out rather fragile. A few broke apart while I was dipping them in the chocolate – they just crumbled. I wonder if it was because I was using natural peanut butter – the kind that made only of peanuts and nothing else? In that case, I wonder if I should add an extra egg…

I have been hearing about your blog for ages, but just sat and read through (a lot of) it tonight. I have a wheat gluten allergy, so for most of your recipes, I would need some major doctoring. This is so simple, though, I just had to try it!Naturally gluten free recipes are always awesome. I used extra crunchy peanut butter, and the cookies weren’t quite as pretty as yours, but they tasted great!

These were DELICIOUS! We just made them, but instead of dipping them in peanuts (which we didn’t have available), we dipped some in sprinkles and some in sunflower seeds.

I LOVE your blog and I’m always sooo impressed by all that you do! Wish I had the creativity and patience to try out all of your recipes, but I usually just stick to the simplest, most fool-proof looking ones. That’s why I LOVE the mint oreo truffles! My husband loves the nutter butter truffles. They’re both always a big hit anywhere I take them.
Anyway, I’m heading to a Christmas cookie exchange in a couple of days and so, of course, I came to your blog to find a good recipe! I’m still considering taking the mint oreo truffles….even though I’m not sure if they’re considered cookies….but they’re made from cookies, so it works for me! But now that I’ve come across this peanut butter cookie recipe…..well….I may just have to make these too!! They look too good and my husband loves peanut butter goodies. I was wondering though…..I’m concerned that the crushed peanuts might just be a little too much peanut for me personally…..have you ever tried using crushed toffee bits instead and do you think that flavor would be complimentary to the peanut butter??

P.S. FANTASTIC!!!! I made a couple of modifications…at other posters’ suggestion, I used 3/4 cup sugar instead of 1/2. The cookies were not overly sweet, even with this extra sugar. Secondly, I did dip a few in peanuts, but I dipped the rest in the crushed toffee bits and those were a HUGE hit with everyone. I used the Heath toffee bits but had to crush them a little more before I dipped into them. If not, the bits are too heavy and will slide right off with the melted chocolate. Also, I got lazy and was in a hurry, so instead of dipping 2 sides of the cookie, I just dipped one entire half of the cookie. Thank you for sharing this recipe. We absolutely love it!
