Perfectly Peanutty!

Peanutty Chocolate & Peanut Butter Cookies

Pretty, peanut butter cookies with just five ingredients:

peanut butter
sugar
egg
semi-sweet chocolate
chopped peanuts

That’s my kind of recipe!

  • Preheat oven to 325. Mix peanut butter, sugar and egg until well blended.
  • Refrigerate for 30 minutes.
  • Remove and roll mixture into 18 balls.
  • Place on ungreased cookie sheet 2 inches apart.
  • Flatten each ball by using a fork to make a criss-cross pattern.

Peanut Butter Cookies

  • Bake 18-20 minutes or until lightly browned.
  • Cool for 5 minutes on cookie sheet and then cool completely on a wire rack.

  • Melt chocolate.
  • Dip one end of cookie into melted chocolate and then dip into chopped peanuts. Repeat with other side.
  • Place on wax paper covered cookie sheet and refrigerate until chocolate hardens.

  20. I’m making these for the third time tonight. They have quickly become a much requested favorite! They’re perfect for the church bake sale, because they don’t have any flour! I can offer a gluten free option, which is in high demand right now. It didn’t even occur to me the last time I made them for this bake sale… until someone asked if we had anything gluten free! Amazing! Plus, they have that WOW! factor… so pretty!

    The other time was with a very ambitious young baker. We skipped the chocolate dipping, since it was a last minute adventure, but no one seemed to mind! Now he makes them from memory… so easy when its just three ingredients!

    I saw your question on Bakerella’s blog today (my pops were featured today on her “Pop Stars” section: http://www.bakerella.com/pop-star-wendy-in-california/

    I have frozen cake-pops many times so I can make them ahead of an event. In my experience, it works very well if you bag each pop in plastic (I use small treat bags, turned upside down) then put the pops together in a heavy duty zip lock before freezing them. When you take ’em out of the freezer, let them thaw completely in their individual treat bags……if you remove the bags too soon, the candy coating on the pops becomes really sticky and gooey.

  45. I think the oiliness may be related to whether your peanut butter was refridgerated or not before use. I just made this recipe for the second time… the first time with a half used refridgerated peanut butter and the second time with a brand new non-refridgerated jar. Both were the same brand peanut butter and I followed the directions to the tee both times. My first batch came out non-oily and my second batch came out DRIPPING in oil… it was pretty gross and not to say… extremely messy!… so this must be due to the room temperature peanut butter. From now on, I will make sure my peanut butter is 100% refridgerated! The second batch is in the oven right now…. I hope they turn out as good as the first batch!

  49. P.S. FANTASTIC!!!! I made a couple of modifications…at other posters’ suggestion, I used 3/4 cup sugar instead of 1/2. The cookies were not overly sweet, even with this extra sugar. Secondly, I did dip a few in peanuts, but I dipped the rest in the crushed toffee bits and those were a HUGE hit with everyone. I used the Heath toffee bits but had to crush them a little more before I dipped into them. If not, the bits are too heavy and will slide right off with the melted chocolate. Also, I got lazy and was in a hurry, so instead of dipping 2 sides of the cookie, I just dipped one entire half of the cookie. Thank you for sharing this recipe. We absolutely love it!

  99. After readin all the comments there is not much left for me to say. BUT, hey that is a great idea, we do something the same with a Lions Christmas Fruit cake. Crumble it mix with brandy and condensed milk roll into balls and cover with chocolate nonparils , put in silver small cases leave for a month in the fridge then take out for the festive season.

This comment is for the cupcake pops, not the cookies…I am making them for the first time today for my sister’s baby shower, and I could only find the wilton 1.5″ flower cookie cutter… I didn’t see it on your instructions, but I figured out (after gooey hands and 2 batches) that if you’re going that big with them, it is easier to chill the mixture right after adding the cream cheese icing, and then use a 1″ ice cream scoop to get uniform sizes! I laid the cookie cutter on a bit of wax paper, rolled the ball into a sort of rod (like you said to), and then gently pushed it down into the cutter. They come out nearly perfect looking each time!

  144. I make pb cookies like that too! Well, not dipped in chocolate and nuts, but with only those few ingredients. My recipe has double the amount of sugar, and a teaspoon of vanilla too. I love how easy it is!

    Definitely gonna have to try dipping in chocolate and peanuts, that looks so deliciously amazing!
