S’more or less

Smore Ingredients

S’mores equal ooey and gooey and yummy. To make them, all you really need is some marshmallows and melted chocolate to sandwich between a couple of graham crackers for a quick and easy treat.

But, I wanted to make something more. Something s’more I guess you could say… by using the star players in this sweet treat and baking them into cupcakes.

I originally wanted to make cupcakes with a marshmallowy frosting that I could use a kitchen torch thingy on and toast the surface. However, I don’t have a kitchen torch and that’s probably a good thing. But I had to get these flavors out if my mind. And the only way I could do that is bake. So this is what I came up with instead.

Side view

Marshmallow stuffed graham cracker and chocolate cupcakes. Mmmmm. Mmmmm. Gooood.

Graham Cracker Batter

First, I added a little graham cracker cupcake batter in the bottom of the baking cups. And then I topped it with a butter, graham cracker and brown sugar mixture. Ohhhh yeah.

Marshmallow Centers

Then I cut some marshmallows in half and placed them right on top of that.

Cupcake Batter

Lastly cover the marshmallows and fill the baking cup about 3/4 full with the chocolate cupcake batter and more of the graham cracker crumb mixture.

Top View

When they bake, the marshmallow will mostly melt away into the cupcake, but a little will make it’s way to the surface and peek through the topping.

Toothpick

When you take them out of the oven, use a toothpick to separate any of the cake from the edge of the pan while they are still warm. They may stick a little from the marshmallows. But if you go ahead and do this carefully while they are still warm, then you can remove them without the cupcake tops tearing.

Side view

Then when you unwrap them, they will be perty! These looked too tempting right out of the oven so I may have had one or three while they were still warm. You could definitely stop here and serve them just like this.

Ganache

But the chocolate lover in me, convinced me to make some ganache. It was a struggle, but the chocolate won as usual.

Ganache

You can just use a spoon and pour it on randomly so you can still see some of the textured tops underneath. You can also dunk them for complete chocolate coverage.

Good Ganache

But, I like the messy look on these. The non-precise, shove in your face look.

Smore Cupcakes

And I also like them with the extra marshmallow look.

Ganache!

Not as easy to stuff in my face this way, but I managed.

S’more Cupcakes

Cupcakes
1 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking powder
1 teaspoon baking soda
3/4 cup cocoa
3/4 cup graham cracker crumbs
1 cup milk
2 eggs
2 teaspoons vanilla
1/2 cup oil
6 jumbo marshmallows cut in half, plus more for decorating

Graham Cracker Crumb topping
1/2 cup brown sugar
1/2 cup graham cracker crumbs
1/4 cup butter, melted

Ganache
4 ounces semi-sweet chocolate
1/2 cup heavy cream
1/2 cup butter

Preheat oven to 350 degrees F.
In a bowl, mix flour, sugar, baking powder and baking soda together with a wire whisk.
Separate the mixture in half into two bowls.

Stir cocoa into one bowl and the graham cracker crumbs into the other.
Add 1/2 cup milk, 1 egg, 1 teaspoon vanilla and 1/4 cup oil to the cocoa mixture and beat on medium until combined.
Repeat adding the same ingredients to the graham cracker crumb flour mixture.

Prepare the graham cracker crumb topping.
Add the brown sugar and crumbs in a small bowl and pour on the melted butter. Stir until combined.

Pour a little graham cracker cake batter into the bottom of your baking cups and then sprinkle the topping mixture lightly on the surface.
Place a marshmallow half on top and then cover the marshmallow with the chocolate cake batter until it is about 3/4 full.
Sprinkle with more topping mixture.

Bake cupcakes for about 15 minutes. Place a cookie sheet underneath when you bake just in case. I had a little bit ooze over into the oven. Oops.

This recipe will make at least 12 cupcakes. I had a some batter from each left over so you can probably get more like 14-16.

Let cool and top with ganache.

Heat the butter and cream on the stove. Heat until just before it boils. Remove and pour over chocolate. Stir until completely melted and smooth.
Pour over cupcakes and add more marshmallows if you desire.

Enjoy!

Marshmallows

P.S. These are not gluten-free. But thank you so much everyone for all of the great gluten-free links and resources on the previous post. I do think I will give a go at a recipe sometime once I get my hands on the right ingredients.

  1. Ok so I made these (or a form of these) yesterday. I used a white cake mix with graham crackers (this made the batter a lot thicker in this case) and devil’s food cake mix for the chocolate portion. Other than that, I did everything the same. I did one batch with frozen marshmallows and one batch with them room temperature to see if it made any difference as far as more/less marshmallow being absorbed into the cake part. In my experience, it did not make a difference.

My only problem (like Cijai) is that I had is there were big craters in the tops I guess bc the marshmallow melted and the space it occupied being solid was now for the most part empty so everything above it shifted down. Bakerella-I have no clue how you didn’t get these holes in yours. Any ideas or suggestions?

It worked out though because where the holes were I placed a 1/3 of a large marshmallow in them (which brought the top of the cupcake back flush again) and put the cupcakes under the broiler for a minute or so (until the tops of the marshmallows were toasty). I then put some of the pre-made Pilsbury icing (Milk Chocolate) in a bowl in the microwave and heated until the consistency was thinner. I then drizzled a couple spoonfulls over the cupcake.

Even though I took the easy way out with the cake mixes and tub of pre-made icing, these were absolutely delicious (both with and without the icing)! I will be having one for breakfast! My execution was almost drama free…the only problem being the craters in the tops. If Bakerella or anyone else has any tips on how to avoid this, please do post! Thanks Bakerella!

  2. It’s pretty difficult to get Graham crackers in my part of the world but I don’t think that should stop me so do you think digestive biscuits would be a good substitute?

  3. I want to eat some of your treats. Your cake pops look so good. Seriously.

  4. Rebecca – they are colored papers

    Jessica – see above

Cyndy – you can leave the extra one off

    anabelle – YAY

KPHMom – Glad they loved them so much.

Lauren – the graham cracker batter was thinner, but it worked fine.

    Shanna – http://www.confectioneryhouse.com

    kristie – cute

Cijai – when I made them I completely covered the marshmallows. Look at the pics in the post for reference.

Shayna – Hmmm … something def went wrong. I wish I could offer some suggestions.

Lurel – yeah, you’ll need liners. They may get sticky after sitting a while. Also use good liners. Thick ones.

Amie – Wow! Better than the original. that’s great.

  5. oh em geeee! to die for! I love smores :)

  6. These were GREAT!! I just saw them yesterday and bought the ingredients to make them today! Very yummy and very easy recipe to follow!! I like them better than the original Smores!

  7. These were good! The batter isn’t very sweet, but the graham crumble and the marshmallows made it a good balance. Unfortunately I didn’t have paper liners, so they were kind of a mess. Also, I don’t know if my trays are unusually small, but I had 20 very full cups. Anyway, they were a hit and I’ll definitely try them again (but with the proper equipment next time, haha

  8. HELP ME BAKERELLA!
I made these tonight, and they were a complete DISASTER! They sunk right when they came out of the oven…and I MEAN SUNK! Straight to the bottom :( also, the cupcake liners I used were SATURATED with oil! I swear I used the right amounts of everything….
What did I do? And I’m with Lauren up there who said her graham batter was runny and cocoa batter THICK!
Man…I was so excited to eat these tonight :(

  9. this looks AMAZING!!! can’t wait to make these.

  10. awesome!!!! THey look just that good. wanna try them! thx for sharing the recipe.

  11. In the process of making these RIGHT NOW. The only problem I have with marshmallows in cupcakes is they leave giant craters in the tops. I’m guessing I should add more batter to the top?

  12. Oh Bakerella… you dangerous woman you… these look awesome! I’m always desiring smores yet never go anywhere where there is a fire for me to make them… This makes me happy – sort of ;-) It also means when I do make them, I will be forced to spend hours upon hours in the gym…

  13. (Audrey) I will be making this today or tomorrow and I will definitely try the marshmallow thing in the freezer. I just need to remember to cut it before sticking it in there. LOL!

I will post and comment if it works.

  14. Oh. My. Gawd.

These are just too unbelieveably tempting for words.

    Wow.

  15. Looks delish! Will try with marshmallow frosting!

    Thank you!

  16. Unholy deliciousness! I cannot WAIT to make these these weekend. Pulling out the shopping list now…

  17. this is not even funny how much i need to make these.

  18. S’mores and cupcakes?! A match made in heaven! I can’t wait to try this recipe and enjoy this dessert after cooking some ‘comfort food’ for dinner!

  19. I cant wait to try make these. My kids will love them. I have been reading your blog for about a year, but never posted a comment. I cant wait to start baking. Thanks for inspiring me.

  20. Even though it’s hot as blazes in Australia right now I want these! you. are. a. genius.

  21. I know this comment doesn’t have anything to do with the S’mores but I saw this Cupcake Necklace and had to send you the link. I remember reading a post of yours awhile back about the Betsey Johnson necklace with the cute box and it reminded me of that. Anyway, here it is http://www.etsy.com/view_listing.php?listing_id=25110250
I don’t typically comment on blogs, but I yours is so much fun I couldn’t help myself!!

  22. WOW, these look amazing! I’m not sure how I’m going to sneak them into my diet but I think I need them in my like…and soon!!

  23. Annabelle- I’m thinking of making a version of these tomorrow with box mixes due to time constraints. I was wondering what kind of mix you used as the bottom part and then what kind of chocolate mix you used (Regular Chocolate, Devil’s Food, Dark Chocolate, etc). I would appreciate your input. Did you also do the Graham cracker/brown sugar/butter mixture barrier? Since I will need to make these in a timely fashion, I was thinking warmed canned chocolate icing instead of ganache. Course I’m a girl that has preferred box mixes and icings more than most of the homemade ones I have tried, both my own and others.

Also, I saw where someone mentioned freezing the marshmallow before putting it into the cupcake in the layering process to make it not disappear/get absorbed as much. Bakerella (or anyone else) what do you think of this? I’m intrigued by this idea…it sounds like it could potentially be a solution. Anyone have any input?

Thanks in advance! Loved the post Bakerella and although my version that I am making tomorrow will not be nearly as prestigious, I’m looking forward to them none-the-same!

Also for those who said they had recently indulged in a microwave version of a s’more lately…I am with you. The other night I made 3 and ate every bite. I thought my Wii Fit is really going to fuss at me tomorrow but I don’t care!! There is just something about winter and s’mores…match made in heaven that is too good to resist! Although the microwave version is yummy, I look forward to making a new and refreshing form of this delish treat!!

  24. tHIS LOOKS AMAZING!

    Lovely blog!

  25. I loveeeeeee, love, love… I could go on… I have made your cake balls for Christmas and it was gone in a flash. Now, all I hear is make me more, make me more. LOL!
Then I saw this @ 11 PM and I swore to my cake pans I will make them tomorrow. I have all the ingredients and I’m definitely making them. I was going to make them now but my hubby told me no or I would wake the kids up. Can’t wait to try them.
By the way, I too am starting to get into photography, LOL! Not as good as you but I’m learning along the way. I got a Nikon DS3000 for Christmas :-)

  26. Never had s’more earlier but these look really tempting

  27. OMGosh! Those look soo yummy!! But I have a different question…what store do you get all of those CUTE cupcake holders. I cannot seem to find very many of them in Las Vegas! Thanks!!!

  28. Also, have you seen the Food Network’s The Best Thing I Ever Ate,–Sugar Rush? The Toasted Marshmallow Shake—looks simply divine—if I ever make it to NYC I will definitely be looking for this place! Wish I knew what their “secret ingredient” is!

  29. Oh, I just love me some s’mores—but I make them in the microwave—guess I just lack your patience. But, you got my attention with the torch idea—yeah, I’ve got one! I see it being used for indoor s’mores without the microwave soon—ok, I’ll still probably use the microwave to melt the Hershey—don’t want any “chunky chocolate” in my s’mores—just smooth and silky! My kids are gonna love this! I have three boys who are pyromaniacs—yes, I hide the torch! I also have four brothers—I was born in the morning, just not THIS morning!

  30. You’re killing me!!! These look too outrageous. OMG – must get baking.

  31. My birthday is this Friday and I was just searching for something amazing to serve at my b-day party. YAY! I am going to broild the tops of the marshmallows a bit so they look extra s’moresy. Thank you so much for the recipe!!!!!

  32. Up at 5 am to make these cupcakes for my daughter’s water polo team dinner. I have had 2 so far. Better not eat anymore save some for the girls. I hope they like them as much as I do.

  33. I love your site! Your creativity amazes me everytime. I’m definitely going to try making a batch of this on weekend.

  34. How appropriate that I read this today, when after my little sandwich I raided the cupboards for a treat. A nice delightful microwave s’more. (And no, I am not 13)

  35. holy cow! these look incredible. enjoy smores without smelling like a camp fire!

  36. Oh my word do these look/sounds AMAZING!!! I might just have to give these a whirl soon…once I stop drooling!!!

  37. YUMMY!! Is right. Love your desserts and the step-by-step – I can’t believe you can have all this stuff around you all the time. It would be too tempting. Thanks for all the ideas.

  38. Mini marshmallows would look cute on top too. :)

I love scrolling down with anticipation…..’what will Bakerella do with these’?

  39. Yum! I’m going to make these later today! I love your presentation and recipes!!

  40. Oh yeah. I could get down with these.

  41. I am going to try these!!! I am so glad I stopped by here. I haven’t been by for a while because it showed on my blog that you haven’t updated in like three months! I have to go and figure out why your entries don’t update on my blog roll. I’m sure I’ve missed out on so much stuff!

  42. WOW! My boys are going to love these! and yes, I certainly will too! I have made s’mores bars and cookies, so now I intend to add these cupcakes to the repertoire… yummy. Tried cake balls for the first time at Christmas and they were a big hit. Love your creativity and the photography is fantastic. Thanks for all the inspiration!

  43. YUMMY! This is so going on my list of things to try!

  44. I wonder if you could make this into a cake pop with a mini marshmallow! That would be awesome.

  45. Dunkin Hines has come out with a gleuten free cake mix in different flavors – a savior for people who’d like to bake for their loved ones that suffer from celiacs disease.

  46. YUMYUM:D I feel like trying this!… And pretty much everything else on the site.:D

  47. Woah! *drool* If I ever get around to making SmittenKitchen’s graham cracker recipe, and have the patience to make enough to crumble 1 1/4 cups of crumbs of my finished product, this is definitely what I’ll make with them! (Or if I decide to spend $10 on a box of imported graham crackers. More likely, honestly, though I do want to try baking a FEW crackers myself) ;)

  48. YUM! for sure! these look UH-MAZING … you are way to creative btw! thanks for sharing : ) makes me wish for marshmellows to be sold in my part of the world … : )

  49. am wondering if you put the other half of the marshmallow on the cupcake when you pull the pan out of the oven-still warm, would it start melting to give you ooey gooy, THEN put the ganache on top…..

hmmmm. i need to go bake……………

    :)

  50. These look so yummy! You are too creative :] I can’t wait to try this recipe. I was wondering if the marshmallow filling stays melted/gooey?

  51. WoW!!! what a coincidence, I just baked two types of cupcakes and one of them was a S’mores type, not like your’s , mine was a vanilla cupcake with nutella and marshmallow creme whit a cookie crumb on top and the second cupcake is a cheesecake with crumb topping, I make them because on January 1st. was my B-day and friends are taking me to lunch tomorrow to celebrate,,, since I don’t do much on my real B-day, I celebrated after and I’m allways baking for others so I had to do two delicious cupcakes for my self tooso we can enjoy something good at the end of the meal.

  52. i’m not big on marshmallows either but i saw this and was like OMG! On the fifth day god made these cupcakes…and they were good. I HAVE to try and make these!

  53. Oh. My. Gosh. You just made me have the queen craving of all cravings! (if that makes any sense;) These look so yummy! You’re so creative!

    Brittany

  54. O my gosh I love smores!! I’ve been wanting a smore recipe from bakerella and wanna try these so bad!!

  55. Your creativity never ceases to amaze me! The ganache is just the perfect touch. Can’t wait to try these.

  56. yummy, I borrowed this post for Tempt my tummy tuesday post giving you complete credit, I can’t wait to make these, I hope you dont mind here is my link
    http://www.auntpamscloset.com/2010/01/smores-or-less-for-tempt-my-tummy.html

  57. I’ve never baked with marshmallows before. You really have inspired me with this scrumptious cuties! Thanks, Bakerella! :D

  58. Oh how very creative and yummy! I can’t wait to try these my kids are going to flip!

  59. Bakerella… You have no idea how much you have inspired me. You’re like my new best friend in my head. LOL I don’t even like s’mores… but my kids and my honey love them.. well, they like anything sweet… lol.. so I will definitely be trying these.

Thanks so much for all the yummy goodness you post. I’ve been inspired and I’m working on my own blog as well.

Keep the sweet, yummy treats going! :)

  60. Lauren –
If you are able to see a doctor, I recommend a blood test to look for markers. If your doctor wants to proceed then they do a colonoscopy to confirm. Keep in mind that you have to be reacitve (ie eating gluten and feeling like crap) for your intestines to show signs of gluten intolerance. However if your symptoms clear up on the diet first, I am glad you found your answer!
Bakerella – you do now know how excited I am to be able to recreate one of your delicious triumphs! At christmas we attempted snowmen cakes and also liked the oreo hats (although smooshed) http://smg.photobucket.com/albums/v329/ShastaMiriander/Christmas%2009/

  61. Oh my do these ever look delicious!

  62. OMG – Have mercy. I do love a good S’more. I may find myself leaving a certain diet to eat one of these babies!

  63. Yum these look amazing! I made smore cookies once, but I’ve never thought of encorporating the flavours into a cupcake. You’re a genius!

  64. Sweet fancy Moses, these look amazing. This recipe is going in the “Make this ASAP” file!

  65. Hmmm… I am making these right now! While the batter tastes yummy, I did notice something – the cocoa batter is MUCH thicker than the graham cracker batter. The cocoa batter stands on its own after I remove the beaters, and stays that way! Did this happen for you?

Well however they turn out, I’m sure they’ll taste yummy. Keep up the great work! :)

  66. Did you try to freeze the marshmallows so it might have a creamy marshmallow filling? yummm…. Gotta stick to the healthy plan today :(

  67. Maybe these will get rid of my chocolate craving. I’ve made some truffles for myself but it just isn’t working. I CANNOT wait to try this recipe. *drool*

  68. I wanted to make the same ones with the kitchen torch thingy too and could not figure out how I was going to make that happen! Thanks for a new alternative…can’t wait to try it!

  69. Yes, I would say these look yummy!

  70. Made them! My kids are dying to try them but they must eat dinner first!

  71. aaaahhhh I’m dying! Somebody give me sugar right now! These look awesome, thanks!

  72. Oh so good! I cannot wait to try these!!! The pics look sooooo dreamy too!!

  73. WHY MUST YOU TEMPT ME WITH THIS YUMMY DELICIOUS-NESS?!!!

  74. These look really tasty. I was wondering how you made graham cracker cupcakes and voila! I’m making these right after the salted caramel frosted cupcakes from Nosh with Me. So terribly delicious!

  75. S’mores are my absolute flavor combination and who doesn’t love cupcakes…so I can’t wait to make these! They would be perfect for Valentine’s Day :)

  76. OH GENIUS! Smores are my favorite – I am not supposed to eat sugar ever but I do and when I do I want to make it worth while, so this is definately going on my Bad Gabby Don’t Do it list. Thank you for this :)
    YUM

  77. Wow! That looks awesome, I am definitely going to add those to my list of what to bake next!

  78. wah! those look absolutely delicious :) so creative too! <3

  79. OMG I so need to take a bite out of that first pic!

  80. OMG…this looks like HEAVEN!!

  81. I am a lover of all thing smore…and this…has to be THE best idea I have ever witnessed. Cupcakes combined with smores? I think my life is complete. Thanks for the inspiration, I can’t wait to try these. (and derail my diet, but oh well)

  82. Bakerella you think of EVERYTHING! These look amazing.

  83. OHHHHHHmmmyyyyy those look delicious! In my mind (calorie free of course), I’ve topped them ganache, then a sprinkle of mini marshmallows and itty bitty chocolat chips and then drizzled some more ganache on top and then OF COURSE, some graham cracker crumbs.

I’m reminded of the time I made S’mores with a fork, some marshmallows, all the fixins and the front burner on my stove….

  84. OH MY!
    OH. MY.
I’m going to have to make these, and SOON!
    Thanks so much!!

  85. These look and sound really, really good. I think it was actually the addition of the graham cracker mixture layered between that got my attention. I’m wondering if the broiler on your oven might work in place of a kitchen torch, for a roasted marshmallow topping? I may just have to give that a try. For research purposes, of course. ;)

Funny that we both posted a marshmallow recipe on the same day. Mine is about making homemade marshmallows!

  86. I made these this morning. My three high schoolers just came home and inhaled 7 cupcakes. They LOVED LOVED LOVED them.

  87. I broke down and made a batch this afternoon. They are cooling as I type this note and look SO good. Thanks for sharing your recipe with us!

  88. These look amazing :)

Fwiw, I have found that the gas burners on my stove are a great substitute for a kitchen torch, and I have had lots of fun carmelizing cupcakes over my open flame. I do NOT recommend this to anyone who is accident prone or unsteady, (which means I probably shouldn’t be doing it either), but it does work if you have long enough kitchen tongs :)

  89. These look SO GOOD! Think I could fill them with some Fluff to keep them vegetarian? I want to eat them, like, RIGHT NOW!

  90. I MUST try these. Yum and thank you.

  91. These look delicious! Well, everything on your blog looks delicious!!

I just wanted to mention that for all of the vegetarians and vegans out there, there ARE marshmallows with no gelatin. If you type “vegan marshmallow” into a search engine, you’ll find a bunch of places/people who sell them, as well as recipes to make them yourself. There is at least one seller on etsy who makes them too.

  92. Love your site! Am rushing out for graham crackers now…

  93. mmm I love Smore’s! I’ve done Smore’s trifles, Smore’s brownies and Smore’s cupcakes….I make them similar to the Trophy Smore cupcakes with the graham crust on the bottom, and the chocolate cupcake on top, but I fill mine with marshmallow fluff and top with ganache…soo good and you really get a good mouthful of marshmallow

  94. WOW. Those are immense. Must clean drool off keyboard.

  95. I just made these this morning with my daughter as we homeschool and conveniently enough today we learned about summer! OMG they’re soo good! I did improvise a bit in that I used store bought cake mix instead of going from scratch.. and I also toasted all the marshmallows over my gas stove.

    delicious! thank you!

    http://meettheboyles.blogspot.com/2010/01/omg-delicious.html

  96. You are incredibly amazing! Do you come up with these creations on your own?

  97. OH WHAT A WAY TO START MY DAY…LOOKING AT THESE YUMMY TREATS….IF YOU EVER NEED AN ASSISTANT TO HELP YOU TASTE, I DON’T THINK I’M VERY FAR FROM YOU….THANKS SO MUCH FOR ALL YOUR GREAT THOUGHTS AND IDEAS.

  98. Dear S’more-gasbord of Sweetness,
I am, at this very moment, tossing my New Years resolution to lose weight out the window. What weight? I mean, I don’t want to WAIT to eat these. Big is beautiful -S’more is better than less… Right?
    Love,
    Queen of Denial in NE
(De’ nile ain’t just a river in Egypt, honey)

  99. I hate digging out the camping gear–s’mores are the only motivation for doing so. Maybe I’ll make these at home and send everyone else on their merry way next time!

  100. Idea, next time you make them put the marshmallows in the middle of the cupcake when they start rising. twist the marshmallow first. anyways they look great good on the lips, but bad on the hips.

  101. WOW!!! My kids would LOVE these. And unfortunately so would I. There’s an internal fight going on inside of me right now…do I make these and be the best mom ever or do I not and attempt to maintain my figure. I dunno…I’m not sure I can resist…

  102. Genius! While the sweet little cupcake is enough by itself, I agree with the extra marshmallow for appearance sake. Does it need it for taste as well?

  103. Can’t wait to try these, they look soooooo sinful. :)

  104. umm…i know i will get stoned for this, butt…i hate smores. well, not hate, but stringly dislike. i love e verything seperaetely though. like i love grahm crackers, chocolate and marshmellows, just not all together. i know,im weird. this still looks yummy though. and I definetly recommend buying a torch! i just use the one that came with my creme brulee kit. It’s only $20 for the torch + 4 ramekens. they sell zippo fluid there too, but its too expensive, and its waayyyy cheaper at homedeopt. i used it to melt cheese on crackers, french onion soup etc…

  105. These look wonderful. I Love SMores. One of my favorite treats. I think it would be awesome to have the mini marshmallows on top and then torched a little, if you had a torch, and then add the ganache. It would give it that distinct toasted marshmallow taste. Hmm wonder if I have ingredients to give these a whirl. I got birthdays for my girls coming this would be a yummy winter bday treat.

  106. Okay you had me at S’mores! I cant wait to make these!

  107. These look amazing. I tried baking with marshmallows once and it ended up a disaster, so I will have to give this recipe a try. Thanks for the great idea!

  108. These look beyond yummy …the pictures make them so tempting but having just joined WW , I wonder how many points each one would be?? Probably the extra 35 allowed each week…used up on one delicious cheat!!
    Thanks for the post Angie.

  109. OMG I think my mouth just started watering.

  110. These look great! Martha Stewart has a recipe for Smores cupcakes on her site with the marshmallow frosting. O.M.G. Totally, totally worth purchasing a torch to make those suckers! They are a HUGE hit every time I make them. These look way easier, but just as tasty!

  111. hahaa I just tuned in to watch Scooby-Doo and they are eating S’mores!! hahaa cool!

  112. OMGOSH those look absolutely delicious! i love the added graham cracker crumble!

  113. Yowza! These look so good! I know what I am going to be making tonight! Thanks!

  114. Those look so yummy! They are a definite must-make!

  115. oh, my….. you’ve found a way right into this pregnant lady’s heart! Though I like the idea of the torched marshmallow cream on top. I love toasted marshmallows. YUM! Might just have to try these soon.

  116. Can we say heaven!!! This cupcake looks so delicious Bakerella, that I HAD to share it on my blog!!

Thank you for making such wonderful creations!! YOU ARE THE BEST!!

    <3 Betsy
    http://www.javacupcake.com

  117. Mmm a perfect winter treat!

  118. Good Gosh! These look so good!

  129. Great recipe, Bakerella! Love it and I’m off to make it! Thanks.

  130. Oh wow……now I know what I am doing this afternoon. Yum!!

  131. Oh, my goodness! You have my full attention. Now I “have” to make these for my Brownie Girl Scout Troop, right?

  132. I love s’mores with a passion. Now I have two recipes for s’more cake things that I want to make (but need to stop being lazy and actually make)… yum :)

  133. yum.

i’ve made cupcakes with a marshmallow frosting. all i did was made chocolate cupcakes, and then right as i was about to take them out of the oven, i placed a jumbo marshmallow on top of each of them..got them hot enough so i could smooth them over the top and placed them back in the oven to get a nice little toasty look to them. yum-o!

  134. with the marshmallow on top, the chocolate is like a little delicious seatbelt. haha. i will deffinately try these! they look so fun, i love putting stuff in the middle of cupcakes just to see what happens, i can’t believe i’ve never tried marshmallows!
    wonderful idea!

  135. OMG!!!! these are definitely going in my “TO TRY” list!!!!!!!!!!!!! :O these are so beautiful… its almost insane. :)

  136. These sound so yummy! I like the idea of having S’mores and I don’t have to smell like a camp fire:) Thanks bakerella!

  137. So pretty and so yummy looking. Can’t wait to give these a try. They’d go great with my morning coffee. Hehe, breakfast of champions!

  138. I have baked with marshmallows before too and have had them completely disappear into my treat – was wondering if you thought they could be added midway through the baking process in order to preserve more of the marshmallow? I’ll have to give it a try! Thx for the yummy recipe!

Thanks for sharing, you’re the best!

    Cha Cha

  141. It’s 16 degrees this morning where I live in Florida – and I don’t even live up north in the Panhandle!! It’s too cold to go outside and enjoy real s’mores by a fire, so this is the next best thing! Thanks!

  142. Fabulous idea! These look amazing. :)

  143. oh my gosh these look great! gonna have to make these soon!

  144. These almost make me wish I wasn’t vegetarian. The day they invent vegetarian marshmallows is the day I’m finally happy.

  145. How do you stay so thin?!?!? I would weigh 400 lbs.!

  146. Wow, these looking amazingly delicious, it’s only 9:30am and I’m already craving for cupcakes! I am definately going to have a go at making these however I’ve never seen graham crackers here in the UK, can anybody suggest an alternative? Thanks ^_^

  147. These look yummy… as always!!!

  148. Oh HELL yes, grrrrl.

  149. oh my goodness! I MISS HOME!!!!! We don’t have graham crackers here in Australia, and I was JUST talking about s’mores yesterday!! My sis is coming out to visit, and those are just one of the things I can think of that she NEEDS to bring me. (along with Hershey’s chocolate, Reece’s peanut butter cups, Count Chocula…you get the idea). I am going to try these with a plain cookie substitute…

  150. OMG!!!

    that looks beyond yummmmmmy!!!!!

  151. I can’t wait to try these. And my five ‘children’ (ages 21-28!!!) will love you forever. All five of them STILL love to make s’mores any/every chance they get!!! Thanks in advance. Lori L

  152. Have I told you lately that I love you? Really! I’m not a marshmallow fan either as someone else said, but I adore a good s’more. I’m going to try these tomorrow!

  153. Oh wow, these look amazing! I’m definitely going to have to try making these one day! :)

    http://candidnoir.blogspot.com

  154. OMG these look Aahhhmazing. Most of your treats intimidate me too much to try on my own but these look too good not to…

  155. these look AMAZING
guess who is going to be picking up marshmallows and graham crackers on her way home from work tomorrow?

  156. OMG! These look amazing! I just got back from a birthday dinner for my mom, complete w/creme brulee for dessert and your recipe still makes my mouth water! I’m going to have to make these SOON!

thank you for a beautiful site, great recipes & beautiful photography. Visiting your site is always inspirational.

  157. Oh my goodness YUM! I want these just as they come out of the oven.

  158. this is so yummy and mouth-watering

  159. Who doesn’t love s’mores?! I’m excited to give this recipe a try. Along the same lines, check out my s’more ice cream cake… http://grahamsandee.blogspot.com/2009/07/birthday-party.html

  160. Those marshmellows have it right! YUM! I still the the idea of torching marshmellow fluff on top. Think I can pull it off with a lighter?

  161. These look amazing! I have been craving S’mores but I haven’t picked up a kitchen torch yet so I’ve been stuck! Thank you so much for coming up with these!

  162. Yum is right, those look fantastic.

  163. “Not as easy to stuff in my face this way, but I managed.”
Bakerella, you crack me up =) Thanks!

  164. Dear GAWD, these look good. I’m going to have to send this to all the moms I go camping with in the summer. If we make these in the winter, maybe it will tide us over until the next time we make these summertime treats with our kids. Thanks, Bakerella!

  165. These look amazing!! Definitely have to give them a try. I ADORE s’mores, so I think I would love them. Gorgeous photos! :)

  166. Shut your sweet mouth! Are you kidding me?
S’more’s like this. It must be HEAVEN! Thank you God, thank you.

  167. These look so wonderful. I think you are the princess of baking! I would say queen, but I always think of the wicked queen from Snow White when I hear queen. Princesses are prettier too! :)

  168. Lauren – wow. I wasn’t expecting a comment as powerful as yours. If you do have Celiac’s, I’m so sorry but also happy that some of the comments might have made you aware enough to investigate your symptoms. Let me know what you find out.

Marisa – they were the small ones in this post. One sheet on the table and one propped behind. Sometimes I use really big sheets though.

  169. YUM! Totally going to have to try these!

I actually made “S’mores POPS” this season as a fun experiment. Here’s the link:

    http://gimmesomeoven.com/smores-pops/

  170. I can’t wait to try these! I made s’mores at the office in the microwave when I was about 8 months pregnant, haha! Love them!

  171. Hmm…I like the mixing of the graham crackers throughout, and the marshmallow surprise inside. But I think I would rather have a marshmallow-y frosting/topping of some kind, even without the kitchen torch.

Nice work. Oh, and I second the photo tutorial idea. You say scrapbook paper, but those aren’t 12×12 sheets, now, are they? They must be bigger.

  172. Bakerella your last entry changed my life! I had never heard of celiacs disease or took the time to know what it meant to eat gluten-free. Your post made me curious and the nerd in me had to research. What I found shocked me because it described so much of what I have been struggling with for the past 6 months. I have switched to gluten-free and I’m going to give it a go for the next couple of weeks and see if it makes a difference in how I feel. Thank you so much for bringing this to my attention in wonderfully sweet way :)

  173. Your sense of humor is so great. “However, I don’t have a kitchen torch and that’s probably a good thing.” I’m right there with you on that one! This just made my day. I love s’mores. I can’t WAIT to try these.

  174. Mmmmmm. I just mad a s’more dessert with my little girls this evening. We made a grahm cracker crust and topped it with hot fudge, marshmallow, chocolate pudding with cool with folded in then grahm crackers on top. It was yummy. Those cupcakes look awfully good.

  175. I’m putting these on my “must bake” list!

  176. Im totally making these sometime this week! Look delicious!

  177. I have not had a smore since I was a tween…. that is so interesting.. you tackle the most fun ways to bake..

  178. I had s’mores for the first time in a LONG time on New Year’s Eve at a friend’s bonfire, it had been so long I forgot how yummy it all is, now this just melts my heart because I LOVE cupcakes and still have that slight craving for the s’mores again, might have to try this one! YUM is right!

  179. I’ve been waiting for you to do a s’mores cupcake! yay!

  180. YUM indeed! I’m dreaming of S’mores lately too! Thinking of a S’more cake . . . hmmmm!!! These look amazing.

  181. My favorite cupcake store in Seattle, Trophy, makes s’mores cupcakes on Sundays and Mondays. They do actually blowtorch their marshmallow ‘frosting’ and it is visually beautiful. Yum, indeed! :)

  182. I LOVE S’mores too, but I LOVE ice cream, so just recently I made S’mores Ice Cream! Check it out! Great minds think alike! :)

  183. Would you PLEASE give us a little tutorial on how you take your pictures with the smooth colorful backgrounds? The graphic design lover in my would love to see this side of your posts. Pretty please?

  184. I love you. I really do. Bite size sin. Mmmm.

  185. what a coincidence! for some reason this entire weekend i’ve been craving s’mores – probably started when i tried that new smore pie thing-y from mc donalds…anyways, i have a feeling i will be making these this week. they look beyond yummy!

  186. YUM is right! I can’t wait till I’m off of phase 1 (and 2) of South Beach and can have things like this again!

  187. Those look so good! I can’t wait to try them.

  188. As my 6 year old daughter would say…. HEAVEN!!!!!!!!!!

  189. wow, you are amazing! maybe mini marshmallows on top would be easier on the mouth. i would love to try anything gluten free you made!

  190. These look delicious as usual. You’re awesome Bakerella!!

  191. Candy – Interestingly enough, neither am I. But covered in cake and chocolate, I can do it. Alone, not so much.

  192. Oh my goodness!! So sinful and temtping…especially in light of New Years and all of the resolutions going on!! I am going to bed right now before I try to make these!!

  193. I’m not a fan of marshmallows but this looks nice. :D

  194. I love s’mores!… but s’mores with a cupcake?! Yum! However, I don’t think these will help me with my New Year’s diet. :( Darn!
