S’more or less

Smore Ingredients

S’mores equal ooey and gooey and yummy. To make them, all you really need is some marshmallows and melted chocolate to sandwich between a couple of graham crackers for a quick and easy treat.

But, I wanted to make something more. Something s’more I guess you could say… by using the star players in this sweet treat and baking them into cupcakes.

I originally wanted to make cupcakes with a marshmallowy frosting that I could use a kitchen torch thingy on and toast the surface. However, I don’t have a kitchen torch and that’s probably a good thing. But I had to get these flavors out if my mind. And the only way I could do that is bake. So this is what I came up with instead.

Graham Cracker Batter

First, I added a little graham cracker cupcake batter in the bottom of the baking cups. And then I topped it with a butter, graham cracker and brown sugar mixture. Ohhhh yeah.

Marshmallow Centers

Then I cut some marshmallows in half and placed them right on top of that.

Cupcake Batter

Lastly cover the marshmallows and fill the baking cup about 3/4 full with the chocolate cupcake batter and more of the graham cracker crumb mixture.

When they bake, the marshmallow will mostly melt away into the cupcake, but a little will make it’s way to the surface and peek through the topping.

Toothpick

When you take them out of the oven, use a toothpick to separate any of the cake from the edge of the pan while they are still warm. They may stick a little from the marshmallows. But if you go ahead and do this carefully while they are still warm, then you can remove them without the cupcake tops tearing.

Then when you unwrap them, they will be perty! These looked too tempting right out of the oven so I may have had one or three while they were still warm. You could definitely stop here and serve them just like this.

Ganache

But the chocolate lover in me, convinced me to make some ganache. It was a struggle, but the chocolate won as usual.

You can just use a spoon and pour it on randomly so you can still see some of the textured tops underneath. You can also dunk them for complete chocolate coverage.

But, I like the messy look on these. The non-precise, shove in your face look.

Yield: 12-14 cupcakes

S'more Cupcakes

Ingredients

Cupcakes

  • 1-1/2 cups all-purpose flour
  • 1-1/2 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 cup cocoa
  • 3/4 cup graham cracker crumbs
  • 1 cup milk
  • 2 eggs
  • 2 teaspoons vanilla
  • 1/2 cup oil
  • 6 jumbo marshmallows cut in half, plus more for decorating

Graham Cracker Crumb topping

  • 1/2 cup brown sugar
  • 1/2 cup graham cracker crumbs
  • 1/4 cup butter, melted

Ganache

  • 4 ounces semi-sweet chocolate
  • 1/2 cup heavy cream
  • 1/2 cup butter

Instructions

  1. Preheat oven to 350 degrees F.
  2. Cupcakes: In a bowl, mix flour, sugar, baking powder and baking soda together with a wire whisk. Separate the mixture in half into two bowls.
  3. Stir cocoa into one bowl and the graham cracker crumbs into the other.
  4. Add 1/2 cup milk, 1 egg, 1 teaspoon vanilla and 1/4 cup oil to the cocoa mixture and beat on medium until combined.
  5. Repeat adding the same ingredients to the graham cracker crumb flour mixture.
  6. Prepare the graham cracker crumb topping. Add the brown sugar and crumbs in a small bowl and pour on the melted butter. Stir until combined.
  7. Assemble: Pour a little graham cracker cake batter into the bottom of your baking cups and then sprinkle the topping mixture lightly on the surface.
  8. Place a marshmallow half on top and then cover the marshmallow with the chocolate cake batter until it is about 3/4 full.
  9. Sprinkle with more topping mixture.
  10. Bake cupcakes for about 15 minutes. Place a cookie sheet underneath when you bake just in case. I had a little bit ooze over into the oven. Oops.
  11. Let cool and top with ganache.
  12. To make ganache: Heat the butter and cream on the stove. Heat until just before it boils. Remove and pour over chocolate. Stir until completely melted and smooth. Pour over cupcakes and add more marshmallows if you desire.

P.S. These are not gluten-free. But thank you so much everyone for all of the great gluten-free links and resources on the previous post. I do think I will give a go at a recipe sometime once I get my hands on the right ingredients.

  1. Ok so I made these (or a form of these) yesterday. I used a white cake mix with graham crackers (this made the batter a lot thicker in this case) and devil’s food cake mix for the chocolate portion. Other than that, I did everything the same. I did one batch with frozen marshmallows and one batch with them room temperature to see if it made any difference as far as more/less marshmallow being absorbed into the cake part. In my experience, it did not make a difference.

    My only problem (like Cijai) is that I had is there were big craters in the tops I guess bc the marshmallow melted and the space it occupied being solid was now for the most part empty so everything above it shifted down. Bakerella-I have no clue how you didn’t get these holes in yours. Any ideas or suggestions?

    It worked out though because where the holes were I placed a 1/3 of a large marshmallow in them (which brought the top of the cupcake back flush again) and put the cupcakes under the broiler for a minute or so (until the tops of the marshmallows were toasty). I then put some of the pre-made Pilsbury icing (Milk Chocolate) in a bowl in the microwave and heated until the consistency was thinner. I then drizzled a couple spoonfulls over the cupcake.

    Even though I took the easy way out with the cake mixes and tub of pre-made icing, these were absolutely delicious (both with and without the icing)! I will be having one for breakfast! My execution was almost drama free…the only problem being the craters in the tops. If Bakerella or anyone else has any tips on how to avoid this, please do post! Thanks Bakerella!

  7. These were good! The batter isn’t very sweet, but the graham crumble and the marshmallows made it a good balance. Unfortunately I didn’t have paper liners, so they were kind of a mess. Also, I don’t know if my trays are unusually small, but I had 20 very full cups. Anyway, they were a hit and I’ll definitely try them again (but with the proper equipment next time, haha

    I made these tonight, and they were a complete DISASTER! They sunk right when they came out of the oven…and I MEAN SUNK! Straight to the bottom :( also, the cupcake liners I used were SATURATED with oil! I swear I used the right amounts of everything….
    What did I do? And I’m with Lauren up there who said her graham batter was runny and cocoa batter THICK!
    Man…I was so excited to eat these tonight :(

  23. Annabelle- I’m thinking of making a version of these tomorrow with box mixes due to time constraints. I was wondering what kind of mix you used as the bottom part and then what kind of chocolate mix you used (Regular Chocolate, Devil’s Food, Dark Chocolate, etc). I would appreciate your input. Did you also do the Graham cracker/brown sugar/butter mixture barrier? Since I will need to make these in a timely fashion, I was thinking warmed canned chocolate icing instead of ganache. Course I’m a girl that has preferred box mixes and icings more than most of the homemade ones I have tried, both my own and others.

    Also, I saw where someone mentioned freezing the marshmallow before putting it into the cupcake in the layering process to make it not disappear/get absorbed as much. Bakerella (or anyone else) what do you think of this? I’m intrigued by this idea…it sounds like it could potentially be a solution. Anyone have any input?

WoW!!! what a coincidence, I just baked two types of cupcakes and one of them was a S’mores type, not like your’s , mine was a vanilla cupcake with nutella and marshmallow creme whit a cookie crumb on top and the second cupcake is a cheesecake with crumb topping, I make them because on January 1st. was my B-day and friends are taking me to lunch tomorrow to celebrate,,, since I don’t do much on my real B-day, I celebrated after and I’m allways baking for others so I had to do two delicious cupcakes for my self tooso we can enjoy something good at the end of the meal.

    If you are able to see a doctor, I recommend a blood test to look for markers. If your doctor wants to proceed then they do a colonoscopy to confirm. Keep in mind that you have to be reacitve (ie eating gluten and feeling like crap) for your intestines to show signs of gluten intolerance. However if your symptoms clear up on the diet first, I am glad you found your answer!

  65. Hmmm… I am making these right now! While the batter tastes yummy, I did notice something – the cocoa batter is MUCH thicker than the graham cracker batter. The cocoa batter stands on its own after I remove the beaters, and stays that way! Did this happen for you?

  85. These look and sound really, really good. I think it was actually the addition of the graham cracker mixture layered between that got my attention. I’m wondering if the broiler on your oven might work in place of a kitchen torch, for a roasted marshmallow topping? I may just have to give that a try. For research purposes, of course. ;)

    Fwiw, I have found that the gas burners on my stove are a great substitute for a kitchen torch, and I have had lots of fun carmelizing cupcakes over my open flame. I do NOT recommend this to anyone who is accident prone or unsteady, (which means I probably shouldn’t be doing it either), but it does work if you have long enough kitchen tongs :)

If you type “vegan marshmallow” into a search engine, you’ll find a bunch of places/people who sell them, as well as recipes to make them yourself. I’ve done Smore’s trifles, Smore’s brownies and Smore’s cupcakes….I make them similar to the Trophy Smore cupcakes with the graham crust on the bottom, and the chocolate cupcake on top, but I fill mine with marshmallow fluff and top with ganache…soo good and you really get a good mouthful of marshmallow

  104. umm…i know i will get stoned for this, butt…i hate smores. well, not hate, but stringly dislike. i love e verything seperaetely though. like i love grahm crackers, chocolate and marshmellows, just not all together. i know,im weird. this still looks yummy though. and I definetly recommend buying a torch! i just use the one that came with my creme brulee kit. It’s only $20 for the torch + 4 ramekens. they sell zippo fluid there too, but its too expensive, and its waayyyy cheaper at homedeopt. i used it to melt cheese on crackers, french onion soup etc…

  105. These look wonderful. I Love SMores. One of my favorite treats. I think it would be awesome to have the mini marshmallows on top and then torched a little, if you had a torch, and then add the ganache. It would give it that distinct toasted marshmallow taste. Hmm wonder if I have ingredients to give these a whirl. I got birthdays for my girls coming this would be a yummy winter bday treat.

    i’ve made cupcakes with a marshmallow frosting. all i did was made chocolate cupcakes, and then right as i was about to take them out of the oven, i placed a jumbo marshmallow on top of each of them..got them hot enough so i could smooth them over the top and placed them back in the oven to get a nice little toasty look to them. yum-o!

  172. Bakerella your last entry changed my life! I had never heard of celiacs disease or took the time to know what it meant to eat gluten-free. Your post made me curious and the nerd in me had to research. What I found shocked me because it described so much of what I have been struggling with for the past 6 months. I have switched to gluten-free and I’m going to give it a go for the next couple of weeks and see if it makes a difference in how I feel.
