This IS the best chocolate sheet cake ever. And I’m not just saying that because it’s the only one I’ve ever eaten. It IS delicious. And super moist and oh so chocolatey.
I’m officially in love. With the cake, not the Pioneer Woman. Well, maybe PW, too.
If you don’t know who I’m referring to (laughing as I type that), here’s her site:
I visited her and the family earlier this year at her ranch in Oklahoma and we baked cupcakes and made cake pops for some guests. Actually, she made this chocolate sheet cake recipe then for the cupcakes we used. However, we made a different frosting to decorate with so I didn’t get to experience the full effect. I don’t know what took me so long to try her complete recipe. I’m kicking myself now. It’s so easy and pretty darn quick, too. You don’t even need a mixer. Nope. No mixer. But you do need a 12 X 18 jelly roll pan. I think that’s what deterred me a little. I kept picturing a 12 X 18 cake sitting on my counter. And, well… that’s a lot of cake.
But then, a couple of weeks ago I received a surprise from the UPS guy… or girl…
It was PW’s soon-to-be-released cookbook. I was so excited to see it. I got a preview of the cover back in March and here it was. Finished. Full of Pictures. And Full of Recipes.
Including her Chocolate Sheet Cake.
That settled it. No more procrastinating. Chocolate Sheet Cake here I come.
You’ll need 2 cups flour and 1/4 teaspoon of salt to start. Easy enough.
Then pour on the sugar. Two cups of the sweet stuff. I like how this is going.
Melt some butter. Two sticks. Thank you.
While it’s melting, stir together 1/2 cup buttermilk, two eggs, 1 teaspoon baking soda…
And add a little vanilla. A teaspoon to be exact.
Back to the butter. Drop in four heaping tablespoons of cocoa please.
Mix that all up.
Add a cup of boiling water and stir. Let bubble for just a minute and turn then off the heat.
Then pour that over your flour, sugar and salt mixture and stir it all together.
Add the buttermilk mixture and stir until it’s smooth.
Anyone having a little deja vous here? I kinda feel like PW right about now with all these step-by step photos. But really, I couldn’t resist posting all of these pouring shots.
See… here’s another one. Look at that batter. It’s glorious.
Place the pan in a preheated 350 degree oven for about 20 minutes. I did 18.
And while the cake is baking, you can make the icing.
Melt some more butter. One and 3/4 sticks this time. Add four more heaping tablespoons of cocoa and stir together.
Then add 6 Tablespoons milk and one teaspoon vanilla. Here’s the only thing I did differently. I didn’t have any milk. I know… that bites. So instead I used four tablespoons of evaporated milk mixed with two tablespoons of water. I could have gone all six evaporated, but I wanted to play it safe.
Add ONE POUND of confectioner’s sugar. Thank you again PW. This is definitely going in the right direction.
Mix that all up really, really good. You can also add a 1/2 cup of chopped pecans, but I didn’t have any of those either. And actually, I’m glad I didn’t. This cake was just the way I like it. Non-crunchy.
After the cake is baked , immediately pour on the good stuff. Work the icing all over the cake, so you’ll have less spreading to do. Those little lumps in the photo are just bits of confectioner’s sugar. If you don’t add nuts, you’ll have to stir this really good to get them all out or sift your sugar first. But who has time for that when this cake is waiting.
Let the cake cool completely. Just kidding. Just dig right in.

By the way, this 12 X 18 cake taking up space on the counter? Don’t even think twice about it. The cake won’t last that long.

I’ve tried many of PW’s recipes, some of our favorites are the spicy pulled pork, spicy mac ‘n cheese, Marlboro Man sandwich, spicy grilled shrimp, (seeing a trend here?), and some desserts. I actually started following your blog after you visited her. I haven’t tried the chocolate sheet cake, I think I too am intimidated by such a big pan of cake!

I actually made the French Breakfast Puffs when it was my day to host donut day at work. Who needs donuts when you have these delicious sweet treats? Most of the people who had them said that they were better than any donut they’d ever had. :) That said, how much would I love a copy of the cookbook? Lots!

The bacon-wrapped jalapeno poppers are the BEST! The recipe in the book is slightly different (and better!) than the one on her website. Everyone at our family dinner last night was raving about them! I’d love to give the book to my sister-in-law and let her to some of the cooking next time!

I’ve made PW’s pasta with roasted red pepper sauce and it is THE best! Unfortunately, my husband does not like red pepper sauce but I still make some for myself and freeze half of it for later. It’s one of my favorite dishes.

Wow, I have to pick just one??? I make something of hers almost once a week. This weekend I did the Bacon-Wrapped Jalapeno Thingies. The week before it was the Spreads as I wanted cookies and they are quick and easy. The steak bites are yummy and quick. Paired with some ramen it’s a great quick meal and one that I make when home alone for dinner.
Ok, I’m gonna stop now as I’m making myself hungry.

I LOVE PW! In the past few days I have made MM’s fav sanwich, MM’s second fav sandwich and her cinnamon rolls (I used an icing similar to Cinnabon’s instead of the maple and they were a HIT!). Of all three, since you are “bake”rella, I would say try her cinnamon rolls but be ready to share b/c they make 7 tins. But, both of the sandwiches were AMAZING and man pleasing!

Love her site and look at it several times a day. I love that her recipes are usually simple and not all involved. So much fun to try new things.

Let’s see… I don’t know if I have tried any of her recipes per se, but I use the Tasty Kitchen site often to come up with new ideas. My most recent was a yummy peach jell-o dish with a pretzel crust that was mmm, mmm, good. That said, I have been drooling over PW’s website for years, and I don’t honestly have an excuse for not having tried her recipes before! I can’t wait for the book. I’m so excited!

One of my favorites is the Apricot Bars. Except I make them with raspberry or strawberry preserves. YUM.
Oh those cinnamon rolls! Everytime I get the cinnamon out of the cabinet I immediately get asked if I am making cinnamon rolls…even if it’s 11pm at night. I love them!

I would definately recommend you make the PW’s Tres Leches Cake. I made it one night when I had a mexican themed game night and my guests LOVED it.

I’m from the Oklahoma Panhandle (opposite The Pioneer Woman’s Tulsa corner) but Sheet Cake, sometimes called Sheath Cake, is an institution all over the state. The Pioneer Woman, Ree, is awesome!! Have a fat binder with all her recipes posted on her web – have tried many but love her Favorite Sandwich. I have been a fan of both bakerella and thepioneerwoman, since the day I discovered and have been looking for your updates every single day first thing in the morning, until I figured out how to use the reader.
If there is a recipe that interests me in pioneer woman I try it. I dont think about it twice. Bakerella please try her Prune cake, its really great! Superb! It’s my family’s favorite now.
I didn’t know PW, but I would like you to make the cinnamon rolls :) I’ll try this chocolate cake, I’m curious about it.
I’ve made a couple of her recipes – MM’s favorite and second favorite sandwiches, crash hot potatoes. All good!

I love PW! She is a wonderful cook. I love to see all that she comes up with. My favorite are the bacon wrapped jalapeno poppers. Delish!
I vaguely remember pictures of the two of you before (or so I’m thinking). In any event, I’d love the other copy! I’m looking for a “to die for” red velvet cake recipe and I’ll bet she’s got a winner!

This is hands down my husbands favorite chocolate cake. Until I made this one I pretty much thought all chocolate cakes were the same. Boy was I wrong!

I have tried virtually all of her pasta recipes and they are fantastic. My personal favorite is the spaghetti with artichokes and tomatoes, followed closely by the chicken scallopini (which I made for dinner last night!).
I LOVE PW! The only cooking sites I suscribe to are YOU and PW – that’s enough to cover everything! :) Can’t remember the exact name, but the last recipe I tried on her site was smashed potatoes!
This is the same chocolate cake my mom and grandma make! I was so excited the first time I saw it on PW’s website. I am also slightly obsessed with her cinnamon rolls.
I would love to see you do the cinnammon rolls. I’d love to but I don’t have the work space to make that many pans. But I be *you* do ; )
I haven’t tried any of her recipes but maybe I should! I would love to win a copy of the book, it would make a great gift for my sister in law or mother in law for christmas!

Ooohhhh…I think I may be in love with PW, too. I can’t believe how moist that chocolate cake looks. I homeschool also so thanks for introducing PW to those of us who didn’t know her!

I have been reading and loving PW for at least a couple of years now. If you haven’t tried them already, you absolutely MUST try PW’s mashed potatoes, which use both butter and cream cheese! Yum! Everybody in my family absolutely raves about them.
I do love baking and would love to try it the pioneer way. I would rock those recipes!
Between Bakerella and PW, I have had to increase my time at the gym!! Love ALL the recipes from both of these talented ladies………PW’s Cauliflower soup is a great tummy warmer as the weather cools down……………
I have tried several of her recipes. The chicken finger recipe is to die for…everyone loves it, just like MM.
Hot Crash Potatoes…. so easy and just fabulous… She’s a peach, that Ree!
I’ve made PW’s rosemary buttered cast iron rolls (so so soo good!) and marlboro man’s second favorite sandwich. I’ve been asked to make them both on a weekly basis now! Now though, even after gorging on Halloween chocolate, I think I will need to bake this cake and have just a bit (or a lot) more!

You’re the reason I found out about Ree’s site. I’ve been hooked on both of your websites for about 4 months now and I LOVE both blogs. I was so excited to see Ree cooking this sheetcake on The Bonnie Hunt Show last week. It was great!!

Bacon wrapped jalapenos — you can never make enough
Edna Mae’s Escalloped Cabbage — the food police would be horrified, but it is delicious
Rib Eye with Onion Blue Cheese Sauce — heaven
I love her food! My favorite is hot crash potatoes, yummy!
I have not seen the Pioneer Woman’s site yet, but I’m going to have to check it out – that cake looks lovely :) And the book would be a fabulous addition to my new (but growing!) cookbook collection :)

Mmmmmmm love Ree’s recipes. My favorite so far has to be My Most Favorite Burger Ever. (For Now.). :) soooooo good. I have been wanting to make this cake but like you the jelly roll pan has always detered me. Hmm maybe i will make it for thanksgiving along with the other goods. ;)

I would love to try the chocolate sheet cake as well. The oatmeal crispies sound like a real winner, especially for my son. We always have an abundance of oatmeal so this is something that we could always make on a whim, I mean a craving!! Oatmeal and autumn just go so perfect together even if I happen to live in Florida.
I used 2 of the Pioneer Woman’s recipe for my husband’s birthday dinner. I did Penne a la Betsy (yummy) and PW’s Apple Dumplings – those hot out of the oven with ice cream were to DIE for!! You must try them.
My husband’s birthday is Friday and he asked for a chocolate cake with chocolate frosting – I think he’s going to get this one! We love, love, love PW. Our favorite recipe is Steak Bites, but we also love the Apple Dumplings!

I have tried sesame noodles, yummy, firecracker shrimp, loved it, and spicy shrimp, can’t get enough! I really, really want to try tiramisu…but I am too scared to go for it. LOL

I have yet to find one of PW’s recipes that we do not love. Her brisket is to die for and that chocolate cake, well……it is dangerous around my house. I could eat the whole thing! Would love to have her cookbook so I can get it signed at her booksigning.

Oh yes I have tried some recipes – her Mac and Cheese was the first one I tried…although I have tried more of your recipes…I guess I have a sweet tooth :)
