Mini Maple Pancake Muffins

Mini chocolate chip pancake muffins

… with chocolate chips I might add. Ever get a taste for pancakes, but don’t feel like flipping?

I do. Especially since I always seem to be the one still flipping while everyone else gets to eat the first ones off the pan. If I had a bigger griddle, it would probably be ok. But I have a little one and usually end up frying one pancake at a time to make sure they look decent… which takes for ever.

But not this way. Try these laborless baked pancake muffins. Hmmmmmm… Puffins anyone?

Generously grease a 24 cup mini muffin pan with non-stick spray.

Mini Maple Chocolate Chip Pancake Muffins.
(Someone please come up with a shorter name for these.)

1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
2/3 cup buttermilk
1 egg
2 tablespoons pure maple syrup
2 tablespoons melted butter
1/2 cup milk chocolate chips

  • Preheat oven to 350 degrees.
  • Combine flour, baking powder, baking soda, salt and sugar in a medium bowl. Sift together with a wire whisk.
  • In another bowl, stir buttermilk, egg, maple syrup and melted butter until just combined.
  • Add wet ingredients to dry ingredients and stir with a spoon until combined.
  • Stir in chocolate chips. Reserve a few chips to sprinkle on the tops.
  • Bake for 8-9 minutes.

Makes 24 mini pancake muffins.

Let cool slightly and remove from the pan. You may need to use a toothpick around the edges to separate the pancake muffins from the pan.
Serve immediately with warmed butter if you like or even just with maple syrup.

Using a small bowl to serve the syrup in makes it really convenient to coat the muffins in maple.

These just came out of my oven a few minutes ago! I used a dozen mini muffin pan and a half dozen normal size muffin tin as I didn’t have a 24 cup mini muffin pan.
I added blueberries to some, and left some plain.
These are amazing, and actually very light. I didn’t even need to dip them in maple syrup as the light sweetness was just enough. I ate 5 mini muffins right away because I couldn’t get enough.
These were so easy to whip up, I will definitely be making them again.

I JUST saw these, question (because I just read or scanned through three pages of comments) has the issue of whether or not you have made or you think it can be done .. making them in regular sized muffins? I am tempted to just do it but… hmmm My fiance thinks mini muffins are silly, of course he is 6’7″ and EVERYTHING small is silly.. except for those cake pops that he ate before I could photograph them!

I have made these muffins several times for my teenage son & his friends. I am now one of the most popular moms in the neighborhood! Lol They are so easy to make. My husband loves them, too. He often requests them for breakfast even when we don’t have a house full of kids. Thanks for such a great recipe!!

Just made these! Yummy! :) Instead of dipping it into the syrup, I took a toothpick and opened up the middle a bit and poured the syrup into the middle so that it soaked through the center. Pretty darn good! Much less messy. ^_^

I made a 1/2 batch of these and they turned out GREAT! I used sugar free syrup, SEMI SWEET chocolate chips, and didn’t have buttermilk so I combined FF milk with FF plain yogurt. They were turned out PERFECT! :)

I completely feel your pain on the pancake flipping. I only make pancakes for my four kiddos on Sat mornings but I started throwing a baking sheet into the oven on low so I can stack all pancakes until all are done cooking and we can enjoy breakfast together. My hubby has made these for me twice now… this morning he asked if anything tasted different…. I said no. Well turns out we were out of buttermilk so he just subbed in 2/3c plain fat free yogurt instead. Couldn’t tell! And brings down the cal count…..if we’re counting. I might tell a difference if you put the two right in front of me, but either way they were still my new fave breakfast!!

I just saw this yesterday and decided to try them. This will be the first thing I try off Pintrest. With twin boys on the way I have to find ways to make great food in a short period of time. I used my mother in law Wizzy’s pancake recipe (AKA aunt jemima original box recipe) and threw in a few dollops of real Maple syrup. Baked at 350 for (18 mins regular muffins size and 12-13 minutes for mini.) I didn’t have a mini tray so i used the bottom of the “bake pops” that I bought for my nephew. Which lead to the idea that this recipe can be used for bake pops too! I used to live in Vermont so i’m always in a VT state of mind and therefore mine will be called Moose Puffins and Moose Puffin Pops. Enjoy!

For those who want to know I just made these using my normal size muffin tin and it worked fine. Just like the original I baked at 350. I extended the baking time to 18 min (I used my own recipe though and it’s quite dense so you’ll want to guess and check with this recipe or your own).

These were absolutely perfect. I didn’t have a mini-muffin pan so I made regular sized mufins and it only filled about 10 muffin cups and I baked for about 14 minutes. The kids are fighting over the last one! LOL

Theses were perfect for when the boys had a sleep over. i used the just add water pancake mix that we had and used syrup and water. I also use mini choc chips as I find it takes less to go further.
It would also be yummy w/ sasauge cooked in I think for a savory version.

I have a batch of something similar in the oven now…. I didn’t have all the pancake ingredients but I did have a mix (hey I’m no baker) so I hope they come out yummy…… I ended up splitting the mix in two before I added the maple and in the second batch I mixed in coconut flavor, banana and pineapple pieces…. it smelled amazing and I hope it tastes good. I also always boost my baked goods with wheat germ and milled flax seed. I hope the kids like them :)

I just made these with boxed pancake mix according to directions and added chocolate chips. (I didnt have all of the ingredients for above) Wow! My 2 year old loved them.
I could only imagine how good the above recipe tastes. So much better baked :)

I made these today (sans chocolate chips, so my baby could have them) and they’re great! I should have made a double batch because we ate half of them this morning! Thank you for posting such a scrumptious puffin. Have you ever combined this puffin with a sausage and cheese quiche? Say 1/2 puffin, 1/2 sausage and cheese quiche. Also, do you think making the batter a day or two in advance would be a problem?
