Ooey Gooey Goodness

S'mores Brownies

S’mores Brownies.

Chocolate, graham crackers and marshmallows all baked up in a fudgy, gooey brownie. What could be better?

I love a recipe that starts with chopped chocolate.

S'mores Brownies

And ends in something like this.

The recipe for these is from one of my favorite cookbooks, Home Baked Comfort. At least favorite to look at anyway, because I’ve only made one other thing from it so far. But it’s one of the few books I have that I’d want to make almost everything in. Here’s the other recipe I tried out and love: Chewy Chocolate Meringues if you want to check them out. They are way good!

Melted chocolate is so pretty to me. So smooth, shiny, warm, and the beautiful beginning of these brownies.

Heat the chocolate with butter, whisk in sugars, add eggs, vanilla and salt.

Sifted

And then sift in the flour and cocoa. Hello.

So, after I added the sugars, I realized I was going to need a bigger pot. But too late for that … no turning back.

So I carefully stirred it all together and added the crushed graham crackers to the mix before spreading in a pan.

Yummorama!

 

Marshmallows

Then just top with marshmallows. I used 9 jumbo ones, but next time I think I’ll try regular size. Read the notes in the recipe below if you decide to make these. The giant amount of gooeyness from these seeped in and made the brownies take longer to bake.

But if you like gooey melt in your mouth brownies, you’ll love these.

S'mores Brownies

Servings: 24 brownies

Ingredients

  • 1 cup unsalted butter
  • 10 oz. bittersweet chocolate, chopped
  • 1 cup sugar
  • 3/4 cup packed light brown sugar
  • 4 eggs
  • 2 tsp pure vanilla extract
  • 1 tsp kosher salt
  • 1 1/3 cups cake flour
  • 3 Tbsp natural cocoa powder
  • 6-8 whole graham crackers, crushed in your hand
  • 9 jumbo or 12 regular size marshmallows

Instructions

  1. Preheat oven to 350 degrees and generously grease a 9-by-13 inch baking dish
  2. In a large saucepan, melt butter and chocolate over low heat, stirring often until melted and smooth. Remove from heat and whisk in sugars. Then whisk in eggs one at a time, beating well after each addition. Whisk in the vanilla and salt.
  3. Sift the flour and cocoa over the chocolate mixture. Use a rubber spatular to stir just until blended. Stir in crushed graham crackers. Pour into dish, spreading evenly and top with marshmallows.
  4. Bake until a toothpick inserted comes out almost clean, 30-35 minutes. Cool and cut into gooey squares.
  5. NOTES: Try regular size marshmallows. The jumbo ones I used almost covered the entire surface of the brownie when baked and as they melted into the batter, caused me to increase the baking time significantly until done. About 30 minutes in, I covered the dish with foil to keep the marshmallowy tops from getting much darker. Smaller marshmallows would have yielded less goo and given the brownies more places to show through the surface. The few spots that weren't completely covered by marshmallow had a wonderful texture, but the marshmallow saturated sections were gooey even after increasing baking time to almost 45 minutes. But you may like that too. Either way - super yummy!

I’m going to make this soon.

I just skimmed over the photos to the recipe where I noticed it called for whole graham crackers and didn’t say to crush them, and that didn’t seem like it would work. I went back to the text by the photos and saw that it did say “crushed” there, but it would help to add them to the directions.

These look divine! It is 8:30 AM but you’ve already got me in the mood for brownies. That spells trouble :)

I developed a bakery product like this for wholesale a few years back and found that I needed to increased the liquid in the recipe to offset the addition of the crumbled graham crackers, which tend to suck the moisture out of the brownies. In this case since there’s no liquid ingredient in the recipe aside from the flavoring, one could add some coffee or espresso.

Also, I baked them in nonstick muffin tins to make individual brownies. That way the brownies baked faster so the marshmallows wouldn’t over-brown or dissolve.

I currently have 20 bags of marshmallows languishing in my basement (MMF project gone awry) and I think you’ve given me a good reason to crack one open today and use up a bag :) Thanks.

I cannot tell a lie. I love s’more brownies. They are a major comfort food for me. Over 30+ years ago, my mom would bake similar brownies for me. Thank you for the warm, delicious memory that always made every pre-adolescent tragedy I ever had all ok again :) YUM. It’s like a big hug with gooey marshmallow!

This recipe looks amazing! I don’t know if you caught this week’s Shark Tank, but the creator of the “smuffin” walked away with no investment from the sharks. Beth – did you use the whole bag? That sounds like it would be too much. In the notes above in the recipe: I had to increase the baking time a lot from the recipe in the cookbook, I think I had too much marshmallow. (9 jumbo marshmallows) The recipe called for 12 jumbo but by looking at the photo in the book I think they meant to say 12 regular size (as opposed to mini). But I just baked the brownies longer with foil on top to keep it from browning too much and then let them set for awhile before eating. They were fine and super yummy.

We dont know s’mores like you have them(netherlands) but thanks to cartoons my daughter now eat peanut butter and jellie(ok jam) sandwiches and has been asking for s’mores for sometime now
hope this is an acceptable alternative for her :D

i’ll keep the muffin tip in mind for next time,
maybe in mini-cupcakes with a mini marshmellows or would the cracker-crumbles be to big?

I’ll be making it soon. On Valentine’s day my boyfriend gave me an unusual Valentine’s present – he made a private booking for one of the courses organized by Zac’s cooking school in our native Vancouver – cooking classes for couples so I’m now collecting interesting recipes to come up with during that course. I made these last night with regular size brownies and while the topping was a little fluffy at first, overnight the marshmallows sank into the brownies. I might toss a few more (maybe 15 total) on next time. I also didn’t have enough bittersweet chocolate so I used half semisweet, and that worked out just fine. I think they might be even tastier with some chocolate chips thrown in! Thanks for the great recipe!

I’ve officially made these three times already. Per a request, the most recent time with a layer of mini marshmallows inside. I end up using a whole bag of regular marshmallows on top and it is perfectly decadent.

Any thoughts on baking time when making them in cupcake form?

We made these last weekend, and they were ah-mazing!

I ended up taking the leftovers (so I wouldn’t clean the pan out myself) to a party five days after they were baked, and even that old, they tasted great! Everyone was in love with them.

This is a keeper!

I didn’t read through all the comments so not sure if someone already said this, but I happened to have the Jumbo Marshmallows so just cut them in half and they seemed to be the size of a regular large marshmallow. I also only had unsweetened choc so will see how they turned out. :-)

I was intrigued by the recipe and decided to make it for the pre-k children that I teach as a special treat for the last day of school. They look delicious ,but I found the cup of butter too be too much. I followed the recipe exactly ,but my brownies came out greasy. I think 1 cup of butter is too much. Also I would recommend using mini marshmallows instead of jumbo ones.

I made them with mini marshmallows and 45 min the middle was still soupy and not cooked. I think next time I will bake the brownies then add the marshmallows to the top for just the last few minutes so they brown….
