I was craving chocolate. Just chocolate. Okay … WAS is probably the wrong choice of words because I crave chocolate everyday.

And these easy Everyday Brownies from my friend Kamran’s new book Hand Made Baking were … p-e-r-f-e-c-t. < That was me singing btw.

So decadent and fudgy!

Brownie Ingredients

I love brownies because the ingredients are simple and you don’t have to mess with your mixer to make them. And truth be told, when I’m craving chocolate in a pinch, I will break out a brownie mix to quickly satisfy my craving. But these brownies. Oh my gosh, they are insanely chocolatey and totally worth making my craving wait an extra few minutes for their decadence.

They call for dark brown sugar in addition to the white sugar. Sweet!

And the chocolate. Oh, the chocolate. Cocoa plus chunks of chopped dark chocolate get mixed in before baking.

And in no time, you end up with these sinfully sweet squares to enjoy.

 

Everyday Brownies
Yield: 16 brownies

Everyday Brownies

Prep Time 25 minutes
Cook Time 40 minutes
Total Time 1 hour 5 minutes

Ingredients

  • 1 cup unsalted butter
  • 1-1/2 cups granulated sugar
  • 1/3 cup packed dark brown sugar
  • 1-1/3 cups unsweetened cocoa powder
  • 1/2 teaspoon fine sea salt
  • 2 teaspoons pure vanilla extract
  • 3 large eggs, cold
  • 3/4 cup all purpose flour
  • 5 oz roughly chopped dark chocolate cacao (54-70 percent cacao)

Instructions

  1. Position rack in upper third of the oven. Preheat oven to 325 degrees Fahrenheit.
  2. Line an 8-inch square baking pan with parchment paper leaving an overhang on each side.
  3. In a medium saucepan, melt the butter over low heat. Mix in both sugars, the cocoa powder and salt with a silicone spatula or wooden spoon.
  4. The mixture should be lukewarm before adding the eggs. If not, set aside to cool slightly. To test, a clean finger should be able to comfortable stay in the mixture without getting burned.
  5. Vigorously stir in the vanilla and eggs. Once the batter appears shiny and the eggs are blended in well, add the flour and mix just until the flour has disappeared.
  6. Briskly stir in the chopped chocolate and spread the batter evenly into the prepared pan.
  7. Bake for 38-43 minutes, until a toothpick inserted into the center emerges slightly moist with batter.
  8. Allow brownies to cool in the pan placed on a wire rack. Life the parchment paper and transfer brownies to a cutting board and cut into 16 equal squares.

  1. About to make these & I agree with a previous comment, & question whether there is a typo with the amount of cocoa. Should it be 1-1/3 cup or 1/3 cup. Based on other recipes I’ve made I’m hedging my bets & going with 1/3 cup. 

    • Hey Jessica – I used 1 and 1/3 cup of cocoa per Kamran’s book. You can kind of tell in the ingredients photo if you compare it to the amount of sugar in the bowl. Hope yours turn out yummy.

  2. I made this today. I added in 1.5 oz of chocolate and half a cup of milk chocolate chips so that it would be a little sweeter. Brownies were excellent. Mine were done in 26 mins so I would keep an eye on them and use a toothpick so that you don’t overcook them.

  12. I like the way healthy dark chocolate has been used in this recipe. I personally go for the 90% cocoa though but the brownies will definitely be delicious either way…

  14. I make brownies twice every two weeks. My favorite brownies are plain butter and chocolate ones. I can even use the rice cooker to make the brownies. It is going to produce good result. At the first glance, the brownies is wet then I thought it was undercooked, still when eating it was pretty delightful. I will follow this recipe as it is not as complicated as mine. It can help me save more time from now on.

  15. My tip for making delicious batch of brownies is to keep the brownies baking pan in the tray filled with icy water right after being taken out of the oven. The ice is going to help the brownies get frozen more quickly rather than natural cooling. I also prefer adding some cheese.

  16. I tried the recipe and I loved it! So easy and no mixer which was great! The only thing I changed was I added only one cup of cocoa powder and I used a king sized Crunch bar instead of the chopped cocoa, otherwise it was fantastic!!

  21. Made these tonight! I got a little panicked midway through when I realized I only had 1/2 cup of cocoa (I should know by now to always measure ingredients beforehand!), but they were still so chocolatey and incredible! Balanced it out with a teensy bit more flour, and they were hands down, the best brownies I’ve ever made! They were so rich and decadent. Will absolutely make again!

  29. Oh my heavens! I just made this. The only type of cocoa powder I had was Hershey’s special dark which made these EXTRA dark. And I chopped up a ghiradelli baking bar 73% cocoa. Unreal. Maybe a little strong the way I did it but the darkest richest chocolatiest brownies I’ve ever had. I’ve long been on a search for a good homemade brownie. They never seem to be as delicious and easy as store bought but my search is over. Thank you for sharing!

  44. Just made my first homemade Brownies on Saturday, but from another recipe. They went out a bit dry and not as chewy as I hoped they would. But yours look really moist and delicious, next weekend I will give your recipe a try :)
