Lemon Bars and a Little Helper

Lemon Bars

Sweet squares of sugar and citrus. I love them … especially, when other people make them. Ha. What I mean is, when I think about baking something new, I usually lean towards recipes that include chocolate or either chocolate and sometimes chocolate. But every time I’ve ever eaten one of these yummy yellow squares, I think why haven’t I ever made these things. So I did… kinda.

They’re really easy and you don’t even have to get out your mixer. First, grease and flour a 9 X 13 pan. I used a glass one. Next, you’ll need to make a crust.

Crust Ingredients

For the crust, you’ll just need flour, butter and confectioner’s sugar. Easy enough.

Whisk together 1 3/4 cup flour and 2/3 cup confectioner’s sugar. Add 1 cup cold butter.

Step2

Then cut in the butter until the mixture is incorporated and crumbly. I used the back of a fork to work the butter into the flour. When it gets crumbly, pour it into your greased and floured pan and press firmly into the bottom. Bake for about 20 minutes at 350 degrees.

While the crust is baking, you can prepare the lemon topping.

Filling Ingredients

Again, easy ingredients. Flour, sugar, eggs, baking powder and lemon juice. Pretend that’s freshly squeezed juice from real lemons on the right. I didn’t have any on hand.

But before we go on, let me show you my little helper. She always asks to crack the eggs open if she’s around when I’m baking. And when she looks at me with those eyes, I’m sure you know the answer.

Little Helper

She’s great at it, too. So good, in fact, that I let her finish up the rest of the work.

Step3

Slightly beat the four eggs and set aside. Then, measure 1 1/2 cups sugar making sure it exactly meets the line on the measuring cup. She’s very precise.

Step4

Now you’ll need 1/2 cup lemon juice. Right now I wish I had those lemons, so she could experience squeezing the juice out of them. Oh well… moving on. In another large bowl, add the 1 1/2 cups sugar, 1/4 cup flour, 1 tsp baking powder, 4 slightly beaten eggs and 1/2 cup lemon juice. Look at those hands. Steady.

Little Helper

Stir all that together really good.

And then pour it on top of the warm baked crust. Bake for another 20-25 minutes.

Remove and cool completely. Sprinkle with extra confectioner’s sugar and refrigerate.

Yum! And even better, I still don’t have to make them. She can do it for me while I make something chocolatey. Yippee!

Lemon Bars

Crust:
1 cup butter
1 3/4 cup flour
2/3 cup confectioner’s sugar (plus more for dusting)

Topping:
1 1/2 cup plain sugar
1/4 cup flour
1 tsp baking powder
4 eggs, slightly beaten
1/2 cup lemon juice

Preheat oven to 350 degrees
Grease and flour a 9 X 13 pan

To make crust:

  • In a medium bowl, whisk together flour and confectioner’s sugar
  • Cut in butter until combined and crumbly.
  • Press mixture into bottom of pan.
  • Bake for 20 minutes or until golden.

To make topping:

  • While crust is baking, prepare topping.
  • In a larger bowl, add sugar, flour, and baking powder.
  • Then add slightly beaten eggs and lemon juice.
  • Mix well and pour on top of warm baked crust.
  • Bake for 20-25 minutes.
  • When cool, dust with confectioner’s sugar and refrigerate.
  • Cut into bars and enjoy them cold!

  34. Yum! I love lemon bars!! I make them from scratch too, they are very easy aren't they? The only thing I've found is that the confectioners sugar will get too moist (and lose their powdery texture) if I pre sugar them before putting into the fridge. So I wait until ready to serve and then sprinkle. Still delish!

  39. Ahhh yes lemon bars…at the other end of the ones that I have eaten (which were gifts) was always an older woman who loved to bake. I too love chocolate (while I munch on semi-sweet chocolate chips while I type this) and like to try chocolate desserts, chocolate drinks, chocolate hot sauce, etc. But lately, vanilla (rich almost buttery melt in your mouth) has been grabbing my interests.   44. All right… I LOVE lemon bars. I've always, always made them from a box mix. I guess I always just assumed there was more work involved. Anyway, I saw your new blog before I went to work yesterday, and I gasped with glee and immediately decided I was going to make them after I got home that night. I didn't even have to buy ANYthing to make them!! (OK, so I bought extra lemon juice 'cause I knew I'd want to make a second batch soon, but that's it!)   112. Lemon Bars are my favorite! Since chocolate is your favorite, then you could sprinkle 1/4 cup of white chocolate chips over the crust after you pull it out of the oven, let it sit for a minute then pour over the lemon mixture. Bake it up and it's surprising how yummy the white chocolate is with lemon…

My husband loves lemon (I'm a chocoholic so he rarely gets anything non-chocolate!) and last time I made him lemon bars, they tasted delicious but completely fell apart when I cut them.   137. I made lemon bars once. They called for condensed milk and came out more custard-like than translucent jello. They were really good. Although, I'm not sure if they were suppose to come out that way or if I messed up in doubling the recipe in one area and not the other.

    It was the Nestle recipe. Delicious!

  153. I always keep fresh lemons and limes in the house, usually oranges too. Fresh squeezed juice really makes a huge difference, esp. when you can add some lemon zest too, it is full of flavor. Lemons are great for cleaning and for water/club soda too. I'm a big fan.

  173. Oh, how I love lemon bars. So tangy and refreshing and YUM. What makes them even better? Drizzle raspberry or strawberry puree over the cooked and cooled bars before adding the dusting of powdered sugar. Oh wow. :)

  177. i made these a few years ago back when my SO and i were so new & fresh. i was excited to try something new & we both love lemon… Oh the horror when I pulled out the pan of lemon bars when it was grossly uneven… thick on one corner & just a sliver of lemon filling in the other corner… your nice pics make me want to try again.

  179. Happy coincidence! I also made these this weekend for the first time in about ten years. I'm, uh, a little out of practice. They were a bit too crumbly which may be down to the fact that I didn't use cold butter and only a touch of powdered sugar.

    My trusty recipe book also called for two tsp grated lemon rind – it was yummy.
