Paper Pans

A few weeks ago, my friends over at Cake Art gave me a sample pack of some paper pans in a plethora of shapes and sizes. They thought I might like them. But, I don’t. I love them. You can bake and then turn right around and take your goodies to someone special. Either that or display them at home and turn your kitchen into a coffee shop which could be fun, too.

These tiny ones make me happy. The size. The color. The slightly scalloped edge. Happy.

And so do these tee-niny ones. Eeeeek!

They have cylinder-shaped baking molds and regular muffin cup styles, too. Both of these are sturdy enough that you don’t need a muffin tray to bake them in. Just arrange them on a baking sheet and go.

And look at these cuties. They have lids. Perfect to bake and take.

Since I had all these pans, I had to put something in them.

I went for blueberries and bananas…

… and made some yummy muffins.

Blueberry Muffins
Yield: 12-15 muffins

Yummy Blueberry Muffins

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/3 cup butter, room temperature
  • 2 eggs
  • 1 cup mashed ripe bananas (or two medium-sized bananas)
  • 1 teaspoon vanilla
  • 1 cup fresh blueberries (rinse and pat dry)

Instructions

  1. Preheat oven to 350 degrees and line tray with muffin cup papers.
  2. Sift flour, baking powder, salt and sugar together with a wire whisk.
  3. Add butter, eggs, bananas and vanilla. Mix on low until just combined.
  4. Toss blueberries in a little extra flour and then fold into batter. Reserve some blueberries to place on the tops.
  5. Bake for about 20 minutes or until toothpick inserted comes out clean. Serve while still warm with butter.

Add a little butter while they’re still warm and your tummy will say thank you.

I had enough batter to try them out in all of the smaller size pans for fun. The large round paper cake and loaf pans would have to wait for another day.

But you don’t. Cake Art was sweet and gave me a second sample pack. So who wants it? Anyone?

Wow. I really didn’t expect so many people to want to win paper pans. Super surprised. And now I wish I had scored more sample packs from Cake Art. Maybe I’ll get more the next time I make a trip.   11. Those pans are SO CUTE!!! The questions is hard… I love a classic like cranberry orange with some turbinado sugar on top so it’s crunchy… but I also love the crazy stuff like lavendar honey. Whatever, give me a muffin, I’ll probably love it :)

  13. My favorite muffin is actually this muffin that we had at the Hilton in Rome. It must have been some sort of cinnamon spice type muffin with a serious raw sugar topping, but the hubby and I just call them “crack muffins”. I wish I’d been bold enough to ask for the recipe before we left!

  14. Hmmm… That would be a toss up between a blueberry muffin and a cheese struesel muffin.

    Now, if you mixed those two together, that would be heaven! Yum.

  41. A local coffee shop used to have a blueberry cornmeal muffin that was amazing. Of course, they no longer make them (apparently, not everyone has my love of everything cornmeal), so I’ve been trying to recreate them…

    Well, we’ve been on a low carb diet for our wedding so we made some blueberry muffins with Splenda & almond meal – they turned out wonderful, very low carb & taste just as good as regular blueberry muffins! Those have overtaken our house!

And she was so proud to have made something that impressed her future mother-in-law, who is an avid baker!!! I have made them many times since, and always get compliments!!

  104. the best muffins i ever had were in la piedad, michoacan, mexico. they were, i think, sour cream muffins with a cream cheese filling. i used to walk to the bakery on saturday mornings and bring them back for all my roommates while they were still piping hot. that was six years ago, and i still think about those muffins.

  135. My favorite muffin is a corn muffin, sliced in half and grilled in a pan with butter. When I was little, my mom and I would walk to our local 5&10 and sit at the counter . I would choose a corn muffin out of the muffin case and the lady would put it on the griddle. I’d eat it with a glass of the best chocolate milk ever. Now I want to make corn muffins.

    Baking isn’t my strong point. Many times, my cakes don’t release from the pan. These paper pans could be the answer for me. Thanks for sharing!

You only wanted one and I cannot possibly choose between the two. :) I’m very new to your blog and I love it. The paper muffin cups are adorable. If you like bigger muffins…try reusing tuna cans after you’ve eaten the tuna. They make really cute larger muffins.

  177. A coffee shop near my father-in-law makes what they call Burbury muffins. Despite having one every time I visit, I still haven’t identified all the ingredients, but for sure there is cocoanut, raisins, carrots, and walnuts. It is almost like carrot cake, but darker and with some sort of whole grain. Yum. Good thing we are visiting again soon.
