A few weeks ago, my friends over at Cake Art gave me a sample pack of some paper pans in a plethora of shapes and sizes. They thought I might like them. But, I don’t. I love them. You can bake and then turn right around and take your goodies to someone special. Either that or display them at home and turn your kitchen into a coffee shop which could be fun, too.
These tiny ones make me happy. The size. The color. The slightly scalloped edge. Happy.
And so do these tee-niny ones. Eeeeek!
They have cylinder-shaped baking molds and regular muffin cup styles, too. Both of these are sturdy enough that you don’t need a muffin tray to bake them in. Just arrange them on a baking sheet and go.
And look at these cuties. They have lids. Perfect to bake and take.
Since I had all these pans, I had to put something in them.
I went for blueberries and bananas…
… and made some yummy muffins.

Add a little butter while they’re still warm and your tummy will say thank you.
Then tear right in.
I had enough batter to try them out in all of the smaller size pans for fun. The large round paper cake and loaf pans would have to wait for another day.
But you don’t. Cake Art was sweet and gave me a second sample pack. So who wants it? Anyone?

Wow. I really didn’t expect so many people to want to win paper pans. Super surprised. And now I wish I had scored more sample packs from Cake Art. Maybe I’ll get more the next time I make a trip. I am going to say my favorite is the classic stand by of a blueberry muffin. YUM!
I’m a seasonal muffin gal: for summer, blueberry (of course); autumn is pumpkin or sweet potato; winter, bran raisin or oatmeal raisin; spring is lemon poppyseed. All with streusel or nuts on top *except* the lemon poppyseed; that one should have a drizzle of lemon juice/powdered sugar glaze.

But I have to say… blueberry muffin. I simply love baking with this fresh fruit, maybe because It’s difficult to find good quality bluberries here.
My fave is simple, but a goodie: blueberry with lots of sugary crumbles sitting right on top!

I love banana nut muffins; which is saying a lot being as I despise nuts. But sometimes a chocolate chip muffin is enough to brighten my day. :)
Favorite muffin of all times is of course Chocolate Chip. Not any chocolate chip…the home-made, warm, straight out of the oven using the mini chocolate chips – type of muffin. mmmmmmmmm…….Think I’ll go bake some now. :-)

I really love the old recipe for Raisin Bran muffins. You can make them up and put the batter in the fridge and bake from it all week.
My favorite anything is peanut butter, so peanut butter muffins (with milk chocolate chips). Wish I had one right now. Love the paper pans! Fun!

Chocolate cappuccino from Pannekoeken in Rochester, MN. It has a cream cheese frosting and chocolate chips sprinkled on top! I suppose this muffin borders on becoming a cupcake with its sweet flavor:)

Raisin Bran muffins are my favorite. My mom used to make raisin bran muffin batter on the weekend and then make fresh muffins every morning throughout the week. She still does this when my brother and I bring our families to their house for a visit!

I wish I could find the recipe for my favorite muffins! I had them with my grandmother at Jordan Marsh’s restaurant in Massachusetts back in the 70’s. They were bran muffins with raisins and a candied cherry baked into the tops-yum!

My favorite muffin would depend on the season! Summer would be a Strawberry Cream Cheese Muffin, Fall is Pumpkin Chocolate Chip with a chocolate Struesel topping, Winter is Gingerbread with candied ginger and Spring is Lemon Raspberry.

My fave is apple cinnamon streusel with extra streusel! :-) These paper baking pans will be perfect for the summer…taking baked goodies to parties, cookouts, and house parties…and not have to worry about getting my pans back. Bonus!
