Whoopie Pies!

I just tried out a book that’s all about Whoopie Pies. One of the writers of the book (Amy) is also the editor of my book, Cake Pops. Amy sent me a copy to check out and I couldn’t be more excited for her.

I made and fell in love with these sugar-filled sandwiches. They are delish! They’re like little cakes shaped like cookies… (but pie-like… not so much.)

It’s funny… when I gave these treats away, everyone loved them, but no one knew what to call them. Everyone asked “What are they?” It made me wonder how common they are in other places. Have you made whoopie pies? Heard of them? Seen one out in the wild?

No worries if you haven’t. Now you can make your very own. The book is organized for easy reading.

I decided to make the classic chocolate whoopie (big surprise) and paired it with peanut butter filling. The recipe called for dark brown sugar. I used this dark muscovado sugar instead because that’s all I had on hand. It made them extra tasty.

After you mix up the batter, drop it by spoonfuls on a parchment covered baking sheet.

After they bake and cool for a few minutes carefully remove them from the parchment paper.

Place them flat side up on a cookie rack. Then you can spoon the filling on…

Or pipe it on.

Sandwich the filling between two of the cakes.

And press gently. That’s it.

Chocolate Whoopie Pies

Chocolate Whoopie Pies

Ingredients

Chocolate Whoopie Pies

  • 1-2/3 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1-1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 4 tablespoons unsalted butter, room temperature
  • 4 tablespoons vegetable shortening
  • 1 cup packed dark brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup milk

Salty Peanut Butter Filling

  • 3/4 cup creamy peanut butter (or crunchy)
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup confectioners' sugar
  • 1/2 teaspoon salt

Instructions

  1. Whoopie Pies: Preheat oven to 375 degrees. Line baking sheets with parchment paper.
  2. In a bowl, sift together, flour, cocoa, baking soda, and salt.
  3. In another bowl, beat butter, shortening and sugar with a mixer on low until just combined. Increase speed to medium and beat for about 3 minutes.
  4. Add egg and vanilla and beat for two more minutes.
  5. Add half of the flour mixture and half of the milk and beat on low until incorporated. Repeat with remaining flour and milk and beat until combined.
  6. Using a tablespoon, drop batter on baking sheet two inches apart. Bake for about 10 minutes each or until pies spring back when pressed gently.
  7. Remove from oven and cool for about five minutes before transferring them to a rack to cool completely.
  8. Peanut Butter Filling: Beat peanut butter and butter on low until creamy using a mixer. Add sugar and salt and beat on low to incorporate. Increase speed to medium and beat for about four minutes until the filling is light and fluffy. Spread filling on flat side on one cooled cake. Top it with a second cake and press gently.
  9. Store whoopie pies in an airtight container.

Notes

1 Tbsp of batter should make about 48 two-inch cakes or 24 pies.
2 Tbsp of batter should make about 30 four-inch cakes or 15 pies.

You can also roll the edges in sprinkles, chopped chocolate, nuts, etc. or in this case, peanut butter morsels.

Ummm… can I say these are just about the most fun things to eat. They’re so good you kinda feel like you’re being bad when you sink your teeth into them.

    The best one I ever had was on a trip to Vermont. We stopped at a small shop to pick up some water & I saw these HUGE whoopie pies – had to buy a few…. let’s just say they didn’t last long in the car! Very yummy!!!!

  10. Yay!! Whoopie pies. I was so excited to see your post about whoopie pies and even more excited that there is a WHOLE book dedicated to them. My grandma has been making them for ages for all our special occassions. She grew up in Pennsylvania and I’m sure that’s where she learned to make them. She of course doesn’t use a recipe and they are FABULOUS!! She usually does a chocolate cookie with a decadent vanilla filling. I always ask for the recipe and her response is “you know I don’t use one – you’ll just have to write it down as you watch me!” and as far as doing that, well, nearly impossible! Love love love whoopie pies and cannot wait to get this book!! Thanks so much for this post!

  28. I have made pumpkin whoopie pies from a recipe in the cookbook From Amish and Mennonite Kitchens. When I commuted from OH to PA, a coworker would bring in whoopie pies. They were very popular in the area which had a large Mennonite population.

  35. My family’s favorite is oatmeal with pumpkin spice buttercream filling…I like dark chocolate with strawberry cream cheese filling. I don’t make them too often but when I do everybody loves them.

  36. I grew up in Maine, so I was raised on whoopie pies. Isamax Snacks Bakery and Cranberry Island Kitchen both make good whoopie pies. For me the best whoopie pie is homemade. Also nothing beats a chilled whoopie pie.

  161. It’s so funny that you posted these today. The week of July 4, I was wracking my brain to come up with something unusual to make for the 4th barbeque we had been invited to–lots of good cooks, so it’s always sort of a challenge.

    Then, I saw your post on the chocolate chip pillows. However, knowing that there would be 70 people, I knew I needed something else, and someone mentioned whoopie pies. So, that’s what I took, whoopie pies and chocolate chip brownie pillows.

    I wish I’d known about this book–next year, I see an array of whoopie pies!

    BTW, your pillows were a hit. Some young lady that I didn’t even know was apparently wandering around the yard and through the house looking for me. Someone told her “Wren made them”, so she was going room to room, “Is Wren in here?” When she found me, she raved about the delicious cookies. Being hunted down by strangers seems like a sign of a good recipe, so thank you!

  167. Wow, I am surprised so many folks have not heard of these yummy treats. They are common place in bakeries all around New England. My mom used to make them for us on a regular basis. Wicked Whoopies, located in Maine was started as a small home business and now distributes delicious pies all over the Northeast. You can order on line as well I believe.

  170. This bakery I know in DC makes AMAZING Nutella Whoopie Pies with scrumptious hazelnut cookies and then nutella filling in the middle — ridiculously good! Anything like that in the book?

  173. I remember making whoopie pies as a kid…I always loved to bake and the family just loved these…I haven’t made them in years…never thought there would be a whole book dedicated to them. Now I need to get my recipe out and make some. Yum!

  175. I’ve actually only recently heard of them. I have a friend who apparently loves them and was thrilled when we saw them at a craft fair. I believe I remember her saying that they were often made by the amish. That may explain why I never heard about them when I lived in Colorado, there’s a lot more Amish in VA.

  176. I have heard of them, but never made them…They are called Gob’s here in Pittsburgh, and as strange as it sounds, the best ones I have ever had were at Seven Springs Ski Resort!

  177. Whoopie Pies are practically a staple in our New England household. Every recipe is a little different…and the really good recipes are kept very secret. Love them!

  180. I’ve made something similar with icing and oatmeal cookies. My guess on the best place to get some is in Macon, GA at the “Macon Whoppee” ice hockey rink! :)

  181. My Nanna used to make them for us all the. She would mail them to us in college and everyone. Loved them that tried them. She called them gobs and she is from central PA. But they are the same deliousness! If I wasn’t 9 months pregnant, I think I would be making some right now!

  198. We have made it a tradition to make them on New Year’s Eve. I got a recipe from Bon Appetit and it has worked pretty well for me. I haven’t tried making any different kinds though!
